1/8 teaspoon ground nutmeg

1 cup milk
1 small clove garlic, chopped
2 ounces semihard cheese (page 23), grated (1/2 cup)
Roasted Butternut Squash
1 pound butternut squash, peeled, seeded, and roughly chopped
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh chopped rosemary, or 1 teapsoon dried
(makes 4 cups)
Fuji Apple
1 pound Fuji apples (about 3 apples), peeled, cored, and chopped
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 slices applewood-smoked bacon, cooked and crumbled
4 ounces blue cheese, crumbled (1 cup)
2 tablespoons chopped fresh thyme, or 2 teaspoons dried
