AGAVE-GLAZED SHRIMP

1/4 cup chicken broth
2 tablespoons agave
2 tablespoons fresh clementine juice
1/4 teaspoon chipotle powder
1/4 teaspoon ground cumin
Zest and juice of 1 lime
Kosher salt
1 pound 16/20 shrimp (extra jumbo)
Vegetable oil, for the grill plate
Steamed brown rice, for serving, optional
Rice wine vinegar, for seasoning rice, optional

Steps:

  • Whisk together the chicken broth, agave, clementine juice, chipotle powder, cumin, lime zest and juice and 1/4 teaspoon salt in a medium bowl. Add the shrimp and toss to coat. Marinate for 10 to 15 minutes at room temperature.
  • Preheat an indoor grill plate over high heat.
  • Set a strainer over a bowl and drain the shrimp completely, reserving the marinade for later. Place the shrimp in a single layer on a paper towel-lined plate and pat dry. Sprinkle with salt. Grease the grill plate with oil.
  • Grill the shrimp on both sides until super charred and no longer pink in the middle, 2 to 3 minutes per side. Remove to a bowl.
  • Heat a large nonstick skillet over medium-high heat; add the reserved marinade and simmer until reduced by about half, about 2 minutes. Add the cooked shrimp and stir to coat in the sauce. Season with salt. If serving with brown rice, season with a couple drops of rice wine vinegar, plate and serve.

Tajín is a Mexican seasoning made from dried, ground red chiles, sea salt and dehydrated lime juice. It is great sprinkled over fresh cut fruit like mango and pineapple, or rimmed on an ice cold margarita. But it is also an easy way to add chile and lime to your favorite grilled meats, rubs or sauces. In this dish, the lime in the Tajín balances out the sweetness from the agave syrup, while the red chiles complement the smoky flavor of the chipotles. Serve the chicken as is or on toasted hamburger buns with a schmear of mayonnaise, chopped grilled scallions, cilantro leaves and sliced pickled jalapeños. This Tajín sauce also would pair well with grilled bass, cod or salmon, or with shrimp skewers.

Vegetable oil, for the grill
8 skinless, boneless chicken thighs (about 2 pounds)
Sea salt (or kosher salt)
1/2 cup light agave syrup or honey
1/2 cup fresh orange juice
1 teaspoon finely grated orange zest
3 chipotle chiles in adobo, finely chopped, plus 1/4 cup adobo sauce
6 garlic cloves, finely grated
2 tablespoons extra-virgin olive oil
1 tablespoon Tajín Clásico
8 scallions, root ends trimmed
1/2 cup cilantro leaves and tender stems

Steps:

  • Prepare a grill for medium-high, direct heat; clean the grates well, then brush them with vegetable oil. Alternatively, heat a grill pan on medium-high and brush the pan with oil.
  • Arrange the chicken on a sheet tray and generously season both sides with salt. Whisk together the agave syrup, orange juice, orange zest, chipotles, adobo, garlic, olive oil and Tajín in a medium bowl.
  • Brush both sides of the chicken with the Tajín sauce. Grill the chicken, turning and basting often with the Tajín sauce, until cooked through, charred but brick red and glazed, 7 to 9 minutes. Grill the scallions, turning occasionally, until lightly charred on all sides, about 5 minutes.
  • Serve the chicken with the grilled scallions, topped with cilantro.

AGAVE-LIME GLAZED CHICKEN

1/2 cup agave
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon soy sauce
2 teaspoons minced, seeded jalapeño peppers
1-1/2 teaspoons minced garlic
6 boneless skinless chicken breast halves (3 pounds)

Steps:

  • Combine all ingredients except chicken in small bowl mix until well blended. Place chicken in shallow baking dish pour half of marinade over chicken. Cover and refrigerate 2 hours or overnight. Reserve and refrigerate remaining marinade. Grill chicken over medium-hot coals about 15 minutes, turning and basting with reserved marinade, or until chicken is no longer pink in center. Reserve 2 chicken breasts for use in Thai-Style Salad with Shredded Glazed Chicken (see recipe), if desired.

1/2 cup soy sauce
2 tablespoons finely chopped onions
3 cloves garlic, minced
1 tablespoon vegetable oil
1/2 teaspoon fresh grated ginger root
4 to 5 pounds roasting chicken, whole
1/4 cup agave
2 tablespoons soy sauce

Steps:

  • Stir together 1/2 cup soy sauce, onion, garlic, oil and ginger root. Place chicken in plastic bag and place in a bowl. Pour soy sauce over chicken and close bag. Chill for 3 hours, turning chicken occasionally to distribute marinade. Drain. Skewer chicken neck skin to back. Tie legs to tail twist wing tips under back. Place chicken breast side up on rack in shallow roasting pan. Roast in 375°F oven for 1-1/2 hours or until drumstick moves easily. Mix 1/4 cup agave with 2 tablespoons soy sauce. Baste chicken with agave-soy mixture during last 15 minutes roasting time.

2 tablespoons orange juice concentrate, thawed
1 teaspoon grated orange zest
1 clove garlic, minced

4 boneless skinless chicken breast halves

Steps:

  • In small bowl, combine agave with juice concentrate, orange zest, garlic, salt and red pepper flakes. Rinse chicken with cold water and pat dry. Season lightly with salt. In large non-stick skillet, heat margarine and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared. Turn chicken cook another 4 minutes until just cooked through. 1/4 cup lime juice
1-1/4 teaspoons , grated lime peel, , divided
salt
1 teaspoon rosemary, crushed
red hot pepper

1 teaspoon cornstarch
1 tablespoon water

Bake at 375°F for 30 minutes brush with agave mixture and bake 15 minutes longer or until juices run clear. Remove chicken from baking pan pour remaining sauce into pan and deglaze. Strain mixture into small saucepan bring mixture to boil. Combine cornstarch and water add to strained sauce. Cook and stir until mixture comes to boil. Boil 1 minute. Stir in remaining lime peel. Slice chicken breast pour hot sauce over slices.
