ORIGINAL BE-RO MELTING MOMENTS-AFTERNOON TEA BISCUITS OR COOKIES
These are great little "light as a feather" and meltingly crisp English style biscuits, or cookies. This recipe is the slightly adapted recipe from the Be-Ro Flour cookbook - they suggest lard, but I don't "do" lard! Melting Moments ALWAYS made an appearance on my grandmother and mum's afternoon tea table, and we also had them popped into our lunch boxes for school. The recipe is SO easy to rustle up and they stay crisp and fresh for up to 5 days in an airtight tin. You can roll them in coconut or oats, I prefer coconut - but I am sure they would be just as nice with oats, which is a suggested alternative. Children and "big children" love these, and they really are melting moments, great with a cuppa English tea!

Steps:
- Heat oven to 180ºC, 350ºF, Gas Mark 4. Grease two baking trays.
- Cream the butter or margarine with the sugar until very light and fluffy. Beat in the vanilla essence or extract.
- Stir in the flour and mix well.
- Roll walnut sized pieces of the mixture into balls and toss in rolled oats or desiccated coconut.
- Cut each glace cherry into quarters, for quarter for each melting moment.
- Place on baking trays, flatten slightly and place a small piece of cherry on each biscuit. Bake for 10-15 minutes until golden brown but NOT dark brown.
- N.B. To help shape "ball" type biscuits, slightly dampen the hands.

- Sift the flour into a large bowl. Add the salt, sugar and lemon zest and mix to combine.
- In a large saucepan, add the boiling water, butter and vanilla. Heat gently until the butter is melted and the mixture is boiling. Turn off the heat and add the flour mixture. Beat quickly until it is lump-free, then let cool for 5 minutes.
- Beat in the eggs 1 at a time until the mixture is thick and sticky. Let cool for another 10-15 minutes.
- Transfer the churro mixture into a piping bag with a wide star nozzle. Heat the oil in a large saucepan until it reaches 350°F (180°C). Pipe the churro mix into the oil, snipping the ends with kitchen shears. Cook 3-4 at a time for 5 minutes, or until golden brown.
- Drain the churros on paper towels, then coat in a cinnamon-sugar mix. Serve with strawberry jam and clotted cream for a delicious twist on afternoon tea.

- 1. WHAT YOU WILL NEED
- 2. A good fry pan; preferably cast iron. Some cooking rings. They actually make, what are called crumpet rings; however, any cooking rings of the right size should work.
- 3. Chef's Tip: A good crumpet ring should be about 3.5 inches (8.5cm) wide, and 1 inch (2.5cm) tall.
- 4. Begin by whisking the flour, milk, water, and yeast into a thick liquid. A bit thicker than say, heavy cream.
- 5. Chef's Tip: To accomplish this, mix all the ingredients, except the water, and then slowly add the water until you achieve the correct consistency.
- 6. Cover the bowl, and leave in a non-drafty corner of the kitchen until the liquid gets nice and bubbly. This can take (depending on kitchen temperature) several hours.
- 7. Now, whisk the salt and baking powder into the batter.
- 8. Lightly grease the crumpet rings, and set aside.
- 9. Chef's Note: The greasing of the crumpet rings is very important, because the crumpets will need to slide easily out of the rings, during cooking.
- 10. Put some oil on a paper towel, and lightly grease a fry pan or flat griddle. Heat up over medium to medium-high heat.
- 11. MAKING A TEST CRUMPET
- 12. Place a single greased crumpet ring on the hot griddle or fry pan.
- 13. Use a ladle to add batter to the ring but don't fill to the top, give it a bit of room to expand.
- 14. Chef's Note: If the batter runs out the bottom of the ring... the batter is too thin. Add a bit more flour. It's okay if a bit runs out... however, most should stay within the ring.
- 15. After a few minutes, you should see bubbles beginning to form on the surface of the crumpet... Just like making pancakes.
- 16. Chef's Note: If you don't see many bubbles, your batter is too thick. Add a bit of water.
- 17. If you see a lot of bubbles, then after about five minutes, remove the ring, and gently (very gently) turn the crumpet over (unless you prefer to cook only on one side).
- 18. Chef's Tip: Be gentle when turning the crumpets over. If you flip them too hard, it will collapse a lot of the bubbles on the surface, and we want those bubbles.
- 19. Chef's Note: If the bottom is too brown, turn down the heat a bit.
- 20. Cook for two or three minutes, and remove from the heat. The top (that's the part you turned over), should not be as cooked at the bottom. Nicely brown on the bottom, lightly brown on the top, with lots of holes for butter and jam.
- 21. Repeat the procedure until you have the perfect crumpet.
- 22. KEEP CALM AND COOK ON
- 23. You should now have a good batter, and temperature for cooking the remaining crumpets.
- 24. Chef's Note: If you don't have any crumpet rings, you can always add a bit more flour to the mixture, and then drop dollops of batter onto the hot griddle and cook for a few minutes on each side. However, if you do this you won't have a crumpet; you'll have a pikelet.
- 25. Serving Tip: Crumpets store well in the fridge, and can even be frozen. Just reheat them before serving. And those holes in the bread are excellent for holding melted butter and jam... Enjoy.
- 26. Keep the faith, and keep cooking.
BUTTERMILK AND SOUR CHERRY SCONES FOR AFTERNOON TEA AND PICNICS
A delightful and EASY scone recipe that is perfect for a proper afternoon tea or to take on a picnic. Dried sour cherries are sensational and give a deep essence of cherry flavour to these scones, whilst the buttermilk makes them light and airy. This is a casual eating scone, easy to rustle up, and is perfect when eaten fresh from the oven with butter and maybe some cherry jam and cream too! If taking on a picnic, wrap the scone in a clean tea towel to keep it warm and pack the butter and jam separately. Makes one large scone, which is marked to split into wedges when served.

- Preheat the oven to 200 C/190 C fan/Gas Mark 5. Dust a baking sheet with flour.
- Sieve together the flour, salt, sugar and bicarbonate of soda. Mix together the buttermilk and milk. Make a well in the centre and pour on the buttermilk mixture. Mix well until the dough is even, and stir in the sour cherries.
- To shape for cooking, set the dough on a floured surface and turn around in your hands, until you have a neat round shape. Use a floured knife to score the surface into 4 or 6 sections.
- Transfer to the floured baking sheet and bake for 20 - 25 minutes. Set aside on a rack to cool. Best eaten straight away, but can be stored for up to 3 days in an airtight container.

- Preheat oven to 425 degrees F.
- Measure the sifted flour, baking powder, sugar, and salt and mix with fork in large mixing bowl.
- Cut in vegetable shortening until it looks like coarse bread crumbs.
- Add the milk and mix it into the flour with fork-but only until the mixture will form a soft ball.
- Place the ball of dough on a lightly floured surface and knead it 12 times.
- Rub some flour on rolling pin and roll the dough until it's about 1/4 inch thick.
- With a large biscuit cutter cut circles, very close together, in the dough. Use a straight downward motion and do not twist the cutter.
- With a spatula lift HALF of the circles, one at a time onto a cookie sheet and arrange them about 1 inch apart.
- With a small cutter cut a hole in the center of the rest of the circles to make rings and lift out the centers. Set the centers aside.
- Place the rings on top of the circles on the cookie sheet.
- Place a teaspoon of red jam or jelly in each ring.
- Bake biscuits for 12-15 minutes until golden.
- Immediately take bicsuits off cookie sheet with spatula.
- With centers bake into little biscuits.
