1 can (20 ounces) crushed pineapple
4 cups miniature marshmallows
1 large egg, lightly beaten
1/2 cup sugar
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
4-1/2 teaspoons cider vinegar
1 carton (8 ounces) frozen whipped topping, thawed
3 cups diced unpeeled apples
1-1/2 cups lightly salted peanuts, coarsely chopped

Steps:

  • Drain pineapple, reserving juice. In a large bowl, combine pineapple and marshmallows; cover and refrigerate for several hours. , In a saucepan, combine the egg, sugars, flour, vinegar and reserved pineapple juice; cook and stir until mixture thickens and reaches 160°. Remove from the heat; cool. Cover and refrigerate. , Fold whipped topping into the chilled dressing. Add the apples and peanuts to the pineapple and marshmallows. Fold dressing into fruit mixture. 4 c apples cubed (about 4 medium)
20 oz pineapple tidbits (drain & reserve juice for dressing)
2 c miniature marshmallows
1 1/2 c cocktail peanuts
1/2 c brown sugar
1 beaten egg
1 Tbsp flour
1 1/2 Tbsp apple cider vinegar
8 oz whipped topping

Steps:

  • 1. Prepare dressing first by combining in saucepan pineapple juice, sugar, beaten egg, flour and vinegar. Heat until boiling, stirring constantly. Let cool and then blend in whipped topping.
  • 2. While dressing is cooling, combine apples, pineapple, marshmallows, and cocktail peanuts. Fold in cooled dressing.
  • 3. Refrigerate at least four hours before serving. Keeps well.

4 cups mini marshmallows

1 (8 ounce) carton Cool Whip, thawed
3 -4 cups diced apples, unpeeled (about 3 large)
2 cups salted peanuts

Steps:

  • Drain pineapple, reserving juice.
  • In a large bowl, combine marshmallows and pineapple; cover and refrigerate for several hours.
  • In a small saucepan, whisk the egg and sugars. Turn the heat to low andwhisk in the flour, cider vinegar, and pineapple juice.
  • Cook and stir until mixture thickens and gets a little bit glossy and reaches 160 degrees.
  • Remove from heat (at this time I also pass the liquid through a mesh strainer to remove the little egg bits if there are any. Sometimes this happens if you dont whisk it all together well in the previous step). Cool completely and refrigerate.
  • Fold the cool whip into the chilled dressing.
  • Add the apples and peanuts to the pineapple and marshmallows.
  • Fold dressing into fruit mixture and garnish.
