SPICED ALMOND COOKIES
These cookies are my all-time favorite! The recipe has won ribbons at fairs and applause from family and guests alike. One of the reasons I like it is that I can make the dough and freeze it. Then, when I need another batch of cookies, I take a "log" out of the freezer, thaw it and make fresh cookies in minutes. -Wanda Daily, Milwaukie, Oregon

Tips:
- Use blanched almond flour if you can't find almond meal. Simply blanch almonds by pouring boiling water over them, letting them sit for a minute, then draining and rinsing them in cold water. Then, spread them out on a baking sheet and bake them at 300°F for 10-15 minutes, or until they're golden brown.
- Be sure to chill the dough before baking. This will help the cookies keep their shape and prevent them from spreading too much.
- If you don't have apple cider vinegar, you can substitute lemon juice or white vinegar.
- You can use any type of applesauce you like in this recipe. I used unsweetened applesauce, but you could also use sweetened applesauce if you prefer.
- These cookies are best when they're fresh out of the oven, but they can also be stored in an airtight container at room temperature for up to 3 days.
Conclusion:
These Aedens Apple Spice Almond Cookies are so scrumptious, healthy, and friendly to various diets. Made with almond flour, they're grain-free and gluten-free. Coconut sugar and applesauce provide sweetness without refined sugar. A hint of apple cider vinegar adds a tangy flavor. And warm spices like cinnamon and nutmeg give them a cozy, autumnal feel. Whether you're following a special diet or just looking for a healthier cookie option, these cookies are sure to please.
