Tips:
- For a sweeter muffin, use 1/2 cup of brown sugar instead of granulated sugar.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
- To make sure the muffins are cooked through, insert a toothpick into the center of one. If it comes out clean, they are done. If it comes out with batter attached, bake for a few more minutes.
- These muffins are best enjoyed fresh out of the oven, but they can also be stored in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
- To freeze the muffins, wrap them individually in plastic wrap and then place them in a freezer bag. When you're ready to eat them, thaw them overnight in the refrigerator or at room temperature for a few hours.
