2 eggs, lightly beaten
4 tablespoons toasted bread crumbs
2 teaspoons salt

In a large bowl, combine the eggs, bread crumbs, salt, baking powder, and pepper. Stir in the potatoes and onions and mix well. Heat schmaltz and/or vegetable oil in a large skillet over medium heat. • Use a food processor to quickly and easily grate the potatoes.
  • Squeeze the grated potatoes as dry as possible to remove excess water. This will help the latkes to be crispy.
  • Use a large skillet or griddle to cook the latkes. This will prevent them from overcrowding and sticking together.
  • Heat the oil over medium-high heat before adding the latkes. This will help them to brown evenly.
  • Don't overcrowd the skillet or griddle with latkes. Cook them in batches if necessary.
  • Flip the latkes once when they are golden brown. Cook them for an additional 2-3 minutes on the other side.
  • Serve the latkes hot with your favorite toppings.
