2 whole acorn squash (about 2 pounds each)
Coarse salt and ground pepper
1/3 cup brown sugar
2 tablespoons butter
1/4 cup plain dried breadcrumbs
2 tablespoons butter
1/4 cup finely grated Parmesan cheese
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Halve each squash lengthwise. Scoop out and discard seeds. Choose one of the three toppings, above; each makes enough for 4 halves. Brush cut sides of squash halves with 2 tablespoons melted butter (or oil, depending on topping); season generously with salt and pepper.
  • Place halves, cut side down, on a rimmed baking sheet; bake until almost tender when pierced with the tip of a paring knife, about 30 minutes.
  • Turn halves cut side up; dividing evenly, sprinkle with topping. Return to oven; continue baking until tender and browned, about 15 minutes more.

I just finished enjoying a butternut squash with GINGER marmalade &Chili flakes. 3 Tbsp Ginger marmalade, 1/2 tsp chili flakes, mix together and spoon into squash cavity - I really liked this one

1 acorn squash, cut in half lenthwise and seeded
2 tablespoons butter
2 tablespoons honey
1/2 teaspoon dried sage
2 slices bacon, crisp fried, drained and crumbled
3 tablespoons maple syrup
1 jalapeno, cleaned, seeded and finely chopped
3 tablespoons orange marmalade

Steps:

  • Preheat oven to350°F.
  • Place prepared squash cut side down on a baking sheet, bake for 45-50 minutes or until tender.
  • Turn over and sprinkle with one of these toppings.
  • -BROWNED BUTTER:.
  • Melt the butter on med-low heat, swirling it until browned- do not let it burn.
  • Add honey& sage, mix.
  • Drizzle over the cooked squash& serve.
  • MAPLE BACON TOPPING:.
  • Paint the inside of the squash with the maple syrup, sprinkle in the crumbled bacon& serve.
  • MARMALADE& JALAPENO;.
  • Combine the Jalapeno& marmalade in a small saucepan, heat until the marmalade has melted.
  • Pour into the squash cavity& serve.
