CLASSIC MARINARA SAUCE

Homemade marinara is almost as fast and tastes immeasurably better than even the best supermarket sauce - and it's made with basic pantry ingredients. All the tricks to a bright red, lively-tasting sauce, made just as it is in the south of Italy (no butter, no onions) are in this recipe. Use a skillet instead of the usual saucepan: the water evaporates quickly, so the tomatoes are just cooked through as the sauce becomes thick. (Our colleagues over at Wirecutter have spent a lot of time testing skillets to find the best on the market. If you're looking to purchase one, check out their skillet guide.)

Time 25m

Yield 3 1/2 cups, enough for 1 pound of pasta

Number Of Ingredients 6

1 28-ounce can whole San Marzano tomatoes, certified D.O.P. if possible
1/4 cup extra-virgin olive oil
7 garlic cloves, peeled and slivered
Small dried whole chile, or pinch crushed red pepper flakes
1 teaspoon kosher salt
1 large fresh basil sprig, or 1/4 teaspoon dried oregano, more to taste

Steps:

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).

GIADA'S MARINARA

Giada's Marinara image

A great marinara from Giada de Laurentiis that I've tweaked just a bit. I cook Recipe #69173 in this sauce and get rave reviews. Giada's recipe calls for 2 32-oz cans of crushed tomatoes, but I cannot find that size. Instead I used 28 oz cans and an 8 oz can of tomato sauce.

Categories     < 4 Hours

Time 1h50m

Yield 8 serving(s)

Number Of Ingredients 10

1/2 cup extra virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 celery ribs, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon black pepper, plus more to taste
2 (28 ounce) cans crushed tomatoes
8 ounces tomato sauce
2 dried bay leaves

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onions and garlic and saute until onions are translucent (about 10 mins).
  • Add the celery, carrots, and 1/2 tsp each of salt and pepper. Saute until all veggies are soft (about 10 mins).
  • Add tomatoes, tomato sauce, and bay leaves, and simmer uncovered over low heat until the sauce thickens (about 1 hour).
  • Remove and discard bay leaves. Season with salt and pepper, to taste.
  • Note: When serving with Kittencal's meatballs, I make the sauce the day before, bring it to a boil, drop in the meatballs, cover and cook according to Kittencal's directions. I like to serve this over Barilla's "thick spaghetti.".

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your sauce will be. If you can, use homegrown or farmers market tomatoes.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and makes them easier to peel. To roast tomatoes, simply toss them with olive oil and salt and pepper, and roast them in a 400°F oven for 30-45 minutes, or until they are softened and slightly charred.
  • Use a variety of herbs: Herbs add depth and complexity to marinara sauce. Some good options include basil, oregano, thyme, and rosemary. You can also add a pinch of red pepper flakes for a little heat.
  • Simmer your sauce for a while: Simmering allows the flavors to meld and develop. The longer you simmer your sauce, the better it will taste. Aim to simmer your sauce for at least 30 minutes, or up to 2 hours.
  • Taste your sauce as you go: Season your sauce to taste with salt, pepper, and herbs. Be careful not to over-season your sauce, as you can always add more seasoning later, but it's hard to take it out.

Conclusion:

The perfect marinara sauce is a versatile and delicious sauce that can be used on a variety of dishes. It's a great way to add flavor and depth to your favorite pasta dishes, pizzas, and sandwiches. With a few simple tips, you can make a marinara sauce that will impress your friends and family. So next time you're looking for a quick and easy weeknight meal, give Acadia's marinara sauce a try. You won't be disappointed.
