Number Of Ingredients 11

3 pounds red potatoes (quartered)
3 ounces cream cheese (cubed)
1/2 cup heavy cream
10 ounces Velveeta (cubed)
1/2 tablespoon salt
2 garlic cloves (minced)
1/4 cup sour cream
1/2 diced red bell peppers
2-4 ounce cans of chopped green chiles
1/2 cup chopped green onions
2 tablespoons of finely chopped jalapeno (seeded)

Steps:

  • Place cubed potatoes into a pot of water covering completely. Boil potatoes until soft. Drain and return to pan.
  • Add remaining ingredients to potatoes. Mash potatoes until all the ingredients are incorporated.

Tips:

  • Choose the right potatoes: For this recipe, it's best to use small, waxy potatoes that will hold their shape well during cooking. Yukon Gold or red potatoes are good options.
  • Cut the potatoes evenly: This will help them cook evenly. If the potatoes are too large, cut them into smaller pieces.
  • Use a heavy-bottomed pot: This will help distribute the heat evenly and prevent the potatoes from burning.
  • Don't overcrowd the pot: If you're cooking a lot of potatoes, cook them in batches. Overcrowding the pot will make it difficult for the potatoes to cook evenly.
  • Season the potatoes well: Salt, pepper, and garlic powder are all good options. You can also add other seasonings, such as cumin or paprika, to taste.
  • Cook the potatoes until they're tender: This will take about 10-12 minutes. You can check the potatoes by piercing them with a fork. If the fork goes through easily, the potatoes are done.
  • Serve the potatoes immediately: These potatoes are best served hot and fresh. You can garnish them with cilantro or parsley, if desired.

Conclusion:

These Abuelos' Papas con Chile are a delicious and easy-to-make side dish that is perfect for any occasion. The potatoes are crispy on the outside and tender on the inside, and the sauce is flavorful and slightly spicy. This dish is sure to be a hit with your family and friends.
