ABT's are also known as Atomic Buffalo Turds or even just Stuffed Jalapenos. I have even heard them called BBQ'ed Crack as they are so addicting! This is the way that I make them. You can use cheddar cheese or really any other cheese that you like. You can also use pretty much any meat. Popular meats are sausage, steak and/or shrimp. *Use the cheapest, thin sliced bacon. Thick cut wont cook properly. *I use Tyson brand pre-cooked chicken fajita meat as I think it has the most flavor. I have found that when I buy it at WalMart it seems to have a lot of fat in it though.

20 - fresh jalapenos
1 package(s) cream cheese
1 bag(s) chicken fajita meat
1 package(s) bacon
20 - toothpicks
- latex type gloves

Steps:

  • Place the chicken fajita meat in a skillet and cook. Set aside to cool. When cool dice into fairly small pieces. Set to the side for later.
  • Put gloves on then wash the jalapenos, cut the tops off the using an apple corer or potato peeler remove the seeds and veins.
  • Place a little cream cheese (enough to fill maybe 1/4 of the pepper) in the pepper, then a few pieces of the diced chicken fajita meat in the pepper them fill the rest of the way with more cream cheese.
  • Using a good sharp knife, cut the bacon in half. Wrap a slice around the top of the pepper and place a toothpick through to hold the bacon on.
  • Place in grill (indirect heat) or smoker. Check on them every 30 minutes or so. You may have to rotate the rack 180­° if they start getting too done on one side. When the bacon is done, they are ready. The longer you cook them, the milder they become. Cooktime varies between 1 to 2 hours.
  • If you dont have a pepper rack you can cook them "canoe" style. Just lay pepper on it side and cut the top off lengthwise. Stuff with ingredients, wrap full bacon slices around entire pepper and cook directly on the grill grate

36 -40 jalapeno peppers
1 lb breakfast sausage
8 ounces cream cheese
8 ounces shredded cheese
1/2 teaspoon liquid smoke
3 tablespoons dehydrated onion
your favorite barbecue rub
1 garlic clove, pressed
1 lb sliced bacon, cut in half

Steps:

  • Fry the sausage with the onion, rub, garlic and liquid smoke until the sausage is done. Drain well and let cool a bit. mix the sausage in a bowl with the cheese and cream cheese and set aside. Prepare smoker and set / adjust to 250 degrees or preheat oven to 300 degrees. You can either clean the jalapenos by cutting the stem end off and cleaning out the seeds and ribs and standing them in a pepper rack (recommended) or slice them in half lengthwise, removing the seeds and ribs and "canoeing" them. Stuff each pepper until filling is level with top edge of pepper. For vertical peppers lay one piece of bacon over the top of each and fasten with a toothpick and set them in the holes of a pepper roaster. For canoe style, lay a piece of bacon over the top of each and lay out on a baking sheet. Put into smoker and cook for 3-4 hours or bake in oven for 2-3 hours. At end of roasting time turn on broiler and broil long enough to crisp the bacon.
