Time 30m

Number Of Ingredients 14

6 strips (uncooked) bacon (cut into small pieces)
3 Tablespoons butter (unsalted or salted will work)
1 medium yellow onion (chopped (about 1.5 cup/200g))
3 large garlic cloves (minced)
⅓ cup all-purpose flour ((42g))
2 ½ lbs gold potatoes (peeled and diced into pieces no larger than 1" (this was about 6 Large potatoes for me/1.15kg))
4 cups chicken broth ((945ml))
2 cups milk ((475ml))
⅔ cup heavy cream ((155ml))
1 ½ teaspoon* salt
1 teaspoon ground pepper
¼ - ½ teaspoon ancho chili powder**
⅔ cup sour cream ((160g))
Shredded cheddar cheese, chives, and additional sour cream and bacon for topping (optional)

Steps:

  • Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned.
  • Remove bacon pieces and set aside, leaving the fat in the pot.
  • Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
  • Add garlic and cook until fragrant (about 30 seconds).
  • Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
  • Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well.
  • Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
  • Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (half is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.).
  • Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well.
  • Allow soup to simmer for 15 minutes before serving.
  • Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy!

ULTIMATE POTATO SOUP

Ultimate Potato Soup image

This potato soup has more flavor than any potato soup I have ever had. It is a bit salty due to the bouillon cubes but you can add more milk to dilute if you find it necessary. For less creamy and lower fat, use whole milk instead of half-and-half -- still tastes great!

ABSOLUTELY ULTIMATE POTATO SOUP

Absolutely Ultimate Potato Soup image

I have made this for many whom have given it the title. This takes a bit of effort but is well worth it. Please note: for those who do not wish to use bacon, substitute 1/4 cup melted butter for the bacon grease and continue with the recipe. (I generally serve this soup as a special treat as it is not recommended for people counting calories.)

Time 40m

Number Of Ingredients 12

1 lb bacon, chopped
2 stalks celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes peeled and cubed
4 c chicken stock, or enough to cover potatoes
3 Tbsp butter
1/4 c all purpose flour
1 c heavy cream
1 tsp dried tarragon
3 tsp chopped fresh cilantro
salt and peper to taste

Steps:

  • 1. 1. In a Dutch oven, cook the bacon over medium heat until done. Remove bacon from pan, and set aside. Drain off all but 1/4 cup of the bacon grease.
  • 2. 2. In the bacon grease remaining in the pan, saute the celery and onion until onion begins to turn clear. Add the garlic, and continue cooking for 1 to 2 minutes. Add the cubed potatoes, and toss to coat. Saute for 3 to 4 minutes. Return the bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender.
  • 3. 3. In a separate pan, melt the butter over medium heat. Whisk in the flour. Cook stirring constantly, for 1 to 2 minutes. Whisk in the heavy cream, tarragon and cilantro. Bring the cream mixture to a boil, and cook, stirring constantly, until thickened. Stir the cream mixture into the potato mixture. Puree about 1/2 the soup, and return to the pan. Adjust seasonings to taste.

Tips:

  • Use high-quality potatoes: Choose starchy potatoes like Russet or Yukon Gold for a creamy texture.
  • Don't overcook the potatoes: Cook them just until they're tender to avoid a mushy soup.
  • Use a variety of vegetables: In addition to the classic celery, carrots, and onions, try adding other vegetables like leeks, fennel, or parsnips for extra flavor.
  • Don't be afraid to experiment with different cheeses: Cheddar is a classic, but you can also use Gruyère, Parmesan, or even smoked Gouda for a unique twist.
  • Garnish with fresh herbs: Fresh herbs like chives, parsley, or dill add a pop of color and flavor to the soup.

Conclusion:

Whether you're looking for a quick and easy weeknight meal or a comforting dish to warm you up on a cold day, this absolutely ultimate potato soup is sure to satisfy. With its creamy texture, rich flavor, and endless variations, this soup is a true crowd-pleaser. So next time you're in the mood for a delicious and satisfying soup, give this recipe a try.
