Time 1h

Number Of Ingredients 5

2 yukon gold potatoes, cubed
1 pkg (5.5 oz) of au gratin potato mix
1 can(s) (10.5 oz) of condensed chicken broth
1 1/2 c water
1 c heavy cream

Steps:

  • 1. In a large saucepan or pot, combine potatoes, au gratin potato mix, chicken broth and water. Add more water to cover if necessary.
  • 2. Cook over medium heat, stirring occasionally, until potatoes are tender, about 40 minutes.
  • 3. Stir in cream and heat through. Serve and enjoy!

Tips:

  • Use a variety of potatoes: Yukon Gold, Russet, and Red potatoes all have different textures and flavors that can add depth to your soup.
  • Roast the garlic and leeks before adding them to the soup: This will caramelize the vegetables and give them a richer flavor.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
  • Don't overcook the potatoes: The potatoes should be cooked until they are tender, but not mushy. Overcooked potatoes will make the soup gluey.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a splash of cream or milk for a richer flavor.
  • Serve the soup with your favorite toppings: Some popular toppings include croutons, shredded cheese, bacon, and sour cream.

Conclusion:

Potato soup is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With its creamy texture, rich flavor, and endless variations, potato soup is a versatile dish that can be served as a main course or a side dish.
