THE BEST AMERICAN POTATO SALAD

The Best American Potato Salad image

Our favorite potato salad kicks up the traditional mayonnaise base with not only chopped dill pickles, but also uses the pickle brine for extra tang. Scallions, celery and parsley add freshness and a little crunch, while hard-boiled eggs practically make it a meal.

Time 2h30m

Yield 6 to 8 servings

Number Of Ingredients 13

2 pounds russet potatoes, peeled and cut into 1-inch chunks
Kosher salt and freshly ground black pepper

1/4 cup chopped fresh parsley
Paprika, for topping

AAA POTATO SALAD

AAA Potato Salad image

This is the best make ahead potato salad that I've ever come up with. The base of the recipe comes from the bottle of Hellmann's mayonnaise. No one in my family nor my DH's can even come close to this recipe and it's always gobbled up at any family event. I think the key is to making extra sauce and preparing this the day before. Give it a try this summer season and I guarantee you will get great reviews from your family & friends! Prep time includes making recipe 1 day in advance.

HELLMANN'S THE ORIGINAL POTATO SALAD

Hellmann's the Original Potato Salad image

A longtime favorite of my family. We don't have an outdoor summer gathering without this and Hellmann's Classic Pasta Salad. Can't go wrong with these delicious recipes. FYI: because of the mayo content, we put the bowl of salad into a slightly larger-sized bowl filled halfway with ice to keep the salads cold and fresh.

Tips:

  • Use waxy potatoes: Waxy potatoes, such as Red Bliss or Yukon Gold, hold their shape better than starchy potatoes, making them ideal for potato salad.
  • Boil potatoes until tender: Potatoes should be cooked until they are tender but not mushy. Overcooked potatoes will fall apart and make the salad mushy.
  • Cool potatoes before dressing: Allow the potatoes to cool slightly before adding the dressing. This will help the potatoes absorb the dressing better.
  • Use a light dressing: A light dressing, such as a vinaigrette or mayonnaise-based dressing, will allow the flavor of the potatoes to shine through.
  • Add mix-ins: Add your favorite mix-ins, such as chopped celery, onion, hard-boiled eggs, or pickles, to the potato salad.
  • Chill potato salad before serving: Chill the potato salad for at least 30 minutes before serving. This will help the flavors meld together.

Conclusion:

Potato salad is a versatile dish that can be enjoyed as a side dish or main course. With endless variations and possibilities, there's a potato salad recipe for everyone.
