Time 10m

Yield 1 1/2 cups

Number Of Ingredients 9

2 tablespoons chopped shallots
Grated zest of 1 lemon plus 2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 1/2 teaspoons anchovy paste
1 hard-boiled egg
1 hard-boiled egg yolk
1/2 cup olive oil
Kosher salt and freshly ground black pepper.
Kosher salt and freshly ground black pepper.

Steps:

  • Combine the shallots, lemon zest and juice, mustard, anchovy paste and the hard-boiled egg and egg yolk in a blender, then slowly stream in the olive oil. Season with salt and pepper.

Tips:

  • Use fresh, high-quality eggs. This will ensure that your deviled eggs have the best possible flavor and texture.
  • Hard-boil your eggs perfectly. Overcooked eggs will be dry and crumbly, while undercooked eggs will be runny. For the perfect hard-boiled egg, place your eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then reduce the heat to low and simmer for 10-12 minutes. Immediately transfer the eggs to a bowl of ice water to stop the cooking process.
  • Use a variety of stuffings. The possibilities are endless when it comes to deviled egg fillings. Some popular options include:
    • Classic mayonnaise, mustard, and pickle relish
    • Creamy avocado and bacon
    • Smoked salmon and dill
    • Crab meat and Old Bay seasoning
    • Spicy chorizo and manchego cheese
  • Garnish your deviled eggs creatively. A simple sprinkle of paprika or chopped herbs can add a touch of elegance to your deviled eggs. You can also get creative with your garnishes, such as using edible flowers, caviar, or even mini shrimp.

Conclusion:

Deviled eggs are a delicious and versatile appetizer that can be enjoyed by people of all ages. They are perfect for parties, potlucks, and picnics. With a little creativity, you can make deviled eggs that are both beautiful and delicious. So next time you are looking for a simple yet impressive appetizer, give deviled eggs a try!
