THE BEST MEATLOAF I'VE EVER MADE

The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Time 1h25m

Yield 12

Number Of Ingredients 14

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

OUR FAVORITE MEATLOAF

Our Favorite Meatloaf image

This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Provided by Cat Loving Cook

Categories     Meat

Time 1h10m

Yield 2 meatloaves, 6-8 serving(s)

Number Of Ingredients 9

2 lbs ground meat, I like to use a mix of ground turkey and ground beef
3/4 cup breadcrumbs, plain
1 medium onion, chopped fine
1/2 cup ketchup
2 eggs
3 tablespoons onion soup mix (one packet)
1/2 cup ketchup
3 tablespoons brown sugar
2 teaspoons mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
  • Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
  • Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
  • Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
  • While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.
  • After 45 minutes, take the meat loaves out and spread the sauce over the tops.
  • Placed the sauced loaves back in the oven and bake for another 15 minutes or until cooked through.
  • Let the meat loaves cool for 5 - 10 minutes before cutting them.
  • Enjoy!
  • P.S. To cook a frozen meatloaf, take the frozen meat loaf out the day before you want to cook it and let it thaw in the refrigerator. Cook as stated above.
  • P.S.S. This meatloaf pairs wonderfully with my super yummy corn casserole!

A REALLY TASTY MEATLOAF

A Really Tasty Meatloaf image

This meatloaf is the ONLY meatloaf that will come into this house. If fact this was the first thing I ever made that my husband liked (he had 3 pieces!!!) After making this- I knew I might have a chance of being able to cook good food!!! The relish is pretty tasty!! You gotta try it! I think that this would freeze well too!

Provided by Loves2Teach

Categories     Pork

Time 1h20m

Yield 1 loaf, 7 serving(s)

Number Of Ingredients 13

16 ounces ground beef
8 ounces ground pork
2 eggs
4 ounces fresh breadcrumbs
2 ounces chopped garlic
1/4 cup olive oil
3 ounces chopped parsley
1 tablespoon basil
4 large tomatoes, chopped
2 red peppers, chopped
1 cup onion, chopped
4 ounces ketchup
1 garlic clove, minced

Steps:

  • Tomato Relish: Chop tomatoes, peppers, garlic, and onions into a medium dice.
  • Saute over high heat on the stove till the onions start to soften.
  • Then add the ketchup.
  • Lower heat.
  • Reduce to a simmer, cook for another 5 minutes.
  • Meatloaf: In a large mixing bowl combine beef, pork, eggs, bread crumbs, garlic and 1 cup cooled tomato relish.
  • Finish with olive oil, and then pack into a 9-inch loaf pan and place in the middle of a preheated 350 degree oven.
  • Place on cookie sheet in case of drips.
  • Bake for 40 to 60 minutes or until the center of the meat loaf reaches 170 degrees.
  • Finish the meat loaf with remaining tomato relish and broil at 500 degrees until tomato relish begins to crust.
  • Allow meatloaf to cool before slicing.

Tips:

  • Use a variety of meats. Combining different types of ground meat, such as beef, pork, and veal, can create a more flavorful and moist meatloaf.
  • Don't overmix the meat. Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
  • Add moisture to the meatloaf. This can be done by adding eggs, milk, or broth to the mixture. You can also add vegetables, such as onions, carrots, or celery, which will also help to keep the meatloaf moist.
  • Use a meatloaf pan. A meatloaf pan will help to keep the meatloaf from falling apart. If you don't have a meatloaf pan, you can use a loaf pan.
  • Cook the meatloaf at a low temperature. This will help to keep the meatloaf moist and prevent it from drying out. The ideal internal temperature for meatloaf is 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. This will help the meatloaf to retain its juices. Let the meatloaf rest for at least 10 minutes before slicing.

Conclusion:

Meatloaf is a classic comfort food that can be enjoyed by people of all ages. It is a versatile dish that can be customized to suit your own taste. With a little planning and effort, you can make a delicious and satisfying meatloaf that your family and friends will love.
