I have tried a lot of recipes and finally with a few additions and subtractions, this is it!

2 eggs beaten
1/4 c milk
1/2 c dry bread crumbs
1/4 c chopped onion
1 tsp salt
1 tsp ground black pepper
1/2 c diced green pepper
1 1/2 lb ground beef
1/2 c ketchup
2 tsp brown sugar
1 tsp dry mustard powder

Steps:

  • 1. Preheat oven to 350. Grease 9x5 loaf pan. In a bowl lightly mix eggs, milk, bread crumbs, onion, green pepper, salt, pepper, until combined.
  • 2. Gently work in the ground beef until mixed. Press the meat into the loaf pan.
  • 3. Bake in oven until loaf is no longer pink inside and juices run clear about 50 minutes. Thermometer inserted should read 160 degrees.
  • 4. While the meatloaf is baking, mix together ketchup, brown sugar, mustard in bowl. Spread on top of meatloaf during last 15 minutes.

1 cup tomato juice
¾ cup rolled oats
1 egg
¼ cup chopped onion
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine meat, tomato juice, oats, egg, chopped onion, salt and pepper. Mix lightly but thoroughly. Press into 8x4 inch loaf pan.

1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper
