1 ounce Grand Marnier
1/4 cup caramel ice cream topping
1 scoop French vanilla ice cream (I prefer Parlour in Canada or Dryers in USA)
2 tablespoons chocolate chip cookie mix (I use Pillsbury for convenience) or 2 tablespoons pastry dough (I use Pillsbury for convenience)
1 tablespoon pecan pieces

Steps:

  • On a cookie sheet put 2 tbsp mounds of cookie dough- 1 mound per serving.
  • Begin baking cookies according to directions on package or recipe.
  • In a saucepan combine 1oz Grand Marnier for every 1/4 cup of caramel sauce.
  • Simmer on low.
  • Stir constantly.
  • When the cookies have only 2 to 3 minutes remaining to bake, put the pecans in the oven to toast.*I always just use the same baking sheet.
  • When cookies have finished baking assemble the dessert in the following manner: Place one cookie on one dessert plate.
  • Put one scoop of ice cream on top of the cookie.
  • Spoon caramel/ Grand Marnier mixture over the ice cream.
  • Sprinkle pecans over entire dessert.
  • Repeat for each serving.

PIE CRUST
2 pre-cooked deep dish flaky pie crusts (cooled)
TOPPING
1 c chopped pecans
1/4 c butter
7 oz flaked coconut
1 jar(s) caramel topping, 12 oz
FILLING:
1 pkg cream cheese (softened), 8 oz
1 can(s) sweetened condensed milk, 14 oz
1-16 oz Cool Whip, thawed

Steps:

  • 1. If using ready-made pie crust then thaw it out. With a fork, poke holes all over the crust. Place it in the oven at 400 degrees for 10-13 minutes. Set aside.
  • 2. Place butter in frying pan and melt. Add the coconut and pecans. Stir together and toast until golden brown. Set aside to cool.
  • 3. Mix cream cheese and sweetened condensed milk with mixer.
  • 4. Fold in Cool Whip with a wooden spoon.
  • 5. Layer in each, deep dish pie shell 1/4 cream cheese mixture.
  • 6. Add 1/4 of the caramel.
  • 7. Add 1/4 pecan mixture. Do this 2 times for each ingredient and each pie shell.
  • 8. Drizzle a little caramel on top for appearance.
  • 9. Freeze (can keep up to 6 months). Note: I didn't freeze the one we ate today. Not perfectly set, but time will tell on that. We cut into it. By the way... There's an extra one in the freezer if you stop by.

Simply put, these are to die for. Loved by all ages and you don't even need ketchup! Zero clean up as well :)

4 idaho potatoes
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
2 tablespoons herbes de provence
1/4 cup parmesan cheese, grated (use more to taste)

Steps:

  • Preheat oven to 425.
  • Wash potatoes and peel them if you like (I leave skins on for more crunch!) Cut potatoes in half lengthwise, and then in half lengthwise again. Cut into strips, as thin as possible. It's ok if some are a little thicker.
  • Place cut up fries in a big ziploc bag and add olive oil. Shake to coat.
  • In a small bowl, mix all spices, and then dump into bag. Shake to coat.
  • Line 2 cookie sheets with foil. Spray lightly with cooking spray.
  • Arrange fries in a single layer on sheets (don't overlap too much) and sprinkle grated parmesan all over potatoes. Put in preheated oven and bake for 30-45 minutes. You want them to turn golden brown with some crispy edges. 4-5 of them on the outside may turn darker but they are still extremely tasty and just cook faster than the ones in the middle. Watch them closely for desired texture! Just make sure the parm cheese starts to become a golden brown color and potatoes are cooked through!
