I bake them in a muffin tin if I want rolls or in a buttered cake when I want buns and double the recipe to make large 10 buns. These days I half this recipe and put it in muffin tins to bake. One or the reasons this bread is so loved is that...

BUTTERCRUST PASTRY DOUGH

Buttercrust Pastry Dough image

I used a food processor for this tender, flaky pastry dough as it makes it so much easier to achieve the gorgeous 'breadcrumb' texture as you add the ice water. If you use the dough for a savory recipe, I'd cut down the sugar a bit, but not omit it entirely. The most important thing to remember is to use frozen butter and ice cold water.

Time 1h15m

Yield 6

Number Of Ingredients 5

2 cups all-purpose flour, divided
½ cup butter, cut into 12 cubes, frozen
1 tablespoon sugar
1 teaspoon salt
6 tablespoons ice water

Steps:

  • Place blade insert into bowl of food processor. Add 1 cup flour. Sprinkle frozen butter cubes over flour. Add remaining 1 cup flour, sugar, and salt. Cover. Pulse in short bursts on and off until butter is broken into small pieces and looks crumbly, about 1 minute. Drizzle in ice water. Pulse with longer pulses, on and off, until mixture turns pale yellow and looks like crumbs, about 10 to 12 seconds. Scrape down sides with spatula. Pulse once or twice more.
  • Transfer mixture onto a work surface. Bring pieces together to form a tight round ball of dough. Flatten slightly and wrap in plastic wrap. Refrigerate at least 1 hour or overnight before rolling out.

Tips:

  • Use high-quality ingredients, especially the butter. The better the butter, the better the bread will taste.
  • Make sure the butter is cold before you start. This will help to create a flaky crust.
  • Work the dough quickly and gently. Overworking the dough will make it tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will help to make the dough easier to work with.
  • Don't over-roll the dough. Roll it out just enough to fit your baking dish.
  • Brush the top of the dough with melted butter before baking. This will help to create a golden brown crust.
  • Bake the bread in a preheated oven. This will help to ensure that the bread bakes evenly.
  • Let the bread cool for at least 10 minutes before slicing and serving. This will help to prevent the bread from crumbling.

Conclusion:

This 90-minute buttercrust bread is a delicious and easy-to-make bread that is perfect for any occasion. With its flaky crust and soft, fluffy interior, this bread is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy bread recipe, give this one a try!
