This is so delicious! I made it for all the men I worked with for their Birthday. They never wanted anything different.

1 pkg pineapple cakemix
1 small vanilla instant pudding
3/4 c cooking oil
4 large eggs
10 oz 7-up
icing
2 c sugar
1 large can pineapple crushed
2 large eggs
2 Tbsp flour
1 stick butter

Steps:

  • 1. Mix all ingredients and bake at 325 in 2 9 inch round pans for 25 minutes or center springs back.
  • 2. Mix all ingredients for icing and cook over low fire untill thicken. Slightly cool and then stack layers only putting icing between layers and on the top. No icing on the sides.
  • 3. Absolutely delicious!

2/3 cup packed brown sugar
9 slices pineapple in juice (from 20-oz can), drained
9 maraschino cherries without stems, if desired
1 1/3 cups Gold Medal™ all-purpose flour
1 cup granulated sugar
1/3 cup shortening
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg

Steps:

  • Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
  • In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

½ cup margarine, softened
3 eggs
1 (18.25 ounce) package yellow cake mix
1 (20 ounce) can crushed pineapple with juice
½ cup chopped pecans
½ cup margarine, softened
1 (8 ounce) package cream cheese, softened
4 cups confectioners' sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 - 8 inch round pans.
  • In a large bowl cream 1/2 cup margarine until smooth. Blend in the eggs. Add the cake mix and crushed pineapple with juice and mix until smooth. Stir in the 1/2 cup chopped pecans.
