Time 2h

Yield 6 to 8 servings

Number Of Ingredients 16

1 tablespoon ground coriander
1 tablespoon sweet smoked paprika
1 teaspoon ground cumin
1 teaspoon cayenne
Salt and pepper
3 pounds cubed stew meat of your choice, such as beef, pork or chicken (ground meat is also an option, or cubed eggplant if you want to make it vegetarian)
4 tablespoons oil or other fat
1 onion, finely chopped
3 cloves garlic, minced
1 jalapeno, chopped
One 12-ounce bottle beer
2 cups water
28 ounces tomato product of your choice, such as sauce, crushed, diced, etc.
1 canned chipotle in adobo, chopped, optional
Two 15-ounce cans beans of your choice, rinsed (if using pre-soaked dried beans, add with the tomato product)
Optional toppers: fresh cilantro, sour cream, lime wedges, sliced jalapeno, diced avocado or whatever you have on hand

Steps:

  • Heat a large pot over medium heat. Mix together the coriander, paprika, cumin, cayenne and some salt and pepper in a small bowl and toss with the cubed meat, ground meat or eggplant.
  • Add the oil to the pot and when hot, add the meat or eggplant and cook, turning as necessary, until brown, 3 to 5 minutes. Add the onion, garlic and jalapeno and cook, stirring, until beginning to soften, about 2 minutes.
  • Add the beer and water and deglaze the pot, scraping up any brown bits on the bottom with a wooden spoon. Add the tomato and chipotle if using, bring to a simmer and simmer until the meat is tender, 1 to 1 ½ hours. (The cooking time will be less for ground meat, chicken and eggplant.)
  • Add the beans and continue to simmer for 10 to 15 minutes to thicken. (If using pre-soaked dried beans, the cooking time may be longer.) Serve the chili garnished with your favorite toppers on hand.

THE BEST CHILI

The Best Chili image

There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 16

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

1 green bell pepper, roughly chopped
1 red bell pepper, roughly chopped
2 tablespoons chile powder
1 tablespoon ground cumin
1 teaspoon cayenne pepper
One 6-ounce can tomato paste
Two 15-ounce cans fire-roasted tomatoes
2 pounds ground beef
1 pound ground pork
Salt and freshly ground black pepper
Salt and freshly ground black pepper
8 cups (2 quarts) beef broth
Two 15-ounce cans pinto beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
1/2 cup (1 stick) butter, melted, plus more for greasing skillet
1/2 cup light brown sugar
2 large eggs
2 cups yellow cornmeal
1 cup all-purpose flour
1 teaspoon baking soda
Pinch of salt
Pinch of sugar
1 cup buttermilk
1 cup sour cream
1/2 cup diced jalapeno peppers
1/2 cup chopped scallions

Steps:

  • Preheat the oven to 375 degrees F.
  • For the chili: In a large pot or Dutch oven over medium-high heat, add the olive oil and bacon and cook until the bacon is light brown and crispy, about 4 minutes. Remove the bacon from the pan with a slotted spoon and set aside for the cornbread.
  • Add the garlic, onions and green and red peppers to the bacon renderings and cook until the vegetables begin to soften, about 5 minutes. Finally, add the beef broth, pinto beans and kidney beans, reduce the heat to medium, cover the pot loosely with a lid and let simmer for 40 minutes.
  • For the cornbread: In the meantime, whisk together the butter and sugar in a large mixing bowl. Add the eggs and whisk until combined. Add the cornmeal, flour, baking soda, salt and sugar and whisk to combine. Add the buttermilk and sour cream and whisk together. Add the jalapenos, scallions and reserved bacon and use a spatula to stir until just combined.

7 MEAT CHILI -- (THE 7TH MEAT IS PRIDE)

7 MEAT CHILI -- (THE 7TH MEAT IS PRIDE) image

Categories     Soup/Stew     Bean     Beef     Pork     Tomato     Super Bowl     Quick & Easy     Dinner

Yield 15 -20

Number Of Ingredients 18

1/2 - 1 lb Pepperoni (cut into small squares)
1 lb Ground Beef
1 lb Ground Pork
1 lb Ground Bison
1/2 lb Chorizo
1/2 lb Italian Spicy Sausage (Hot)
1 Red Onion (diced)
1 Green Pepper (diced)
1 Jalapeno (seeded and diced)
6 Cans Bushes Medium Chili Beans
4 Cans Roasted Diced Tomatoes
1 Cup Beef Stock (if needed)
1/4 cup Chili Powder
2 Tbsp Garlic Powder
2 Tbsp Cumin (more to taste)
4 Bay Leaves
2 Tbsp Salt
1 Tbsp Pepper

Steps:

  • Pepperoni Notes: I prefer Boars Head pepperoni. Go to your deli counter and have them cut off about a 2-3 inch (1/2 to 1 lb) piece of pepperoni. Dice the pepperoni into small edible size chunks. Cook all the meets in a large non-stick pot, but make sure you cook the pepperoni chunks first. Drain most of the pepperoni grease, but keep enough in the pot to help cook the other meats. Place all cooked meats in a large (to very large) crock pot. Add diced onion, diced green pepper, and diced jalapeno (no seeds). Add 3 cans of chili beans (drained but not rinsed) and 2 cans of tomatoes (drained). Add all spices listed. Mix well. (Optional: add 1 cup of beef stock if the mix looks a little dry) Turn crock pot on low heat for 12 - 18 hours with the lid on. (Stir occasionally) 4 hours before serving add 2 cans chili beans and 2 cans tomatoes. Add seasoning to taste. Remove Bay Leaves. 1 hour before serving: If the chili looks a thin or watery then turn on high with the lid off. Serve with choice of Cheese, Oyster Crackers, Sour Cream, and Diced Onion (This chili is fairly spicy, to reduce heat use mild sausage, mild beans and no jalapeno.)

Tips for a Perfect 7-Meat Chili

  • Use a variety of meats to create a complex and flavorful chili. Beef, pork, sausage, bacon, chorizo, lamb, and venison are all great options.
  • Brown the meats thoroughly before adding them to the chili. This will help develop their flavor and prevent them from becoming tough.
  • Use a good quality chili powder. The chili powder is one of the most important ingredients in the chili, so it's important to use a good quality one.
  • Don't be afraid to add some heat to your chili. A little bit of cayenne pepper or chili peppers can really give the chili a nice kick.
  • Let the chili simmer for at least 2 hours, or even longer. This will allow the flavors to develop and meld together.
  • Serve the chili with your favorite toppings. Some popular toppings include cheese, sour cream, onions, and cilantro.

Conclusion: A Satisfying and Flavorful Dish

7-meat chili is a hearty, satisfying, and flavorful dish that is perfect for a cold winter day. It's also a great way to use up leftover meats. With its complex flavors and variety of textures, 7-meat chili is sure to be a hit with your family and friends.
