1 can meat-only chili
1 can (15-ounce) kidney beans
1 can (15 ounce) pinto beans
1 can (15 oz. size) black beans
1 can (15-ounce) diced tomatoes
1 can (15-ounce) corn (I used Fiesta variety)
1 can (10-ounce) Rotel
Salt and pepper, to taste
8 oz. weight Velveeta, cubed

Steps:

  • Without draining the cans, empty the chili, kidney beans, pinto beans, black beans, tomatoes, corn, and tomatoes with green chilies into a large pot over high heat. Bring to a boil, reduce the heat, and simmer for 10 to 15 minutes to bring all the flavors together. Add salt and pepper as needed.
  • Dice the cheese and stir it into the soup until melted. Serve immediately.

One 15-ounce can meat-only chili
One 15-ounce can kidney beans
One 15-ounce can pinto beans
One 15-ounce can black beans
One 15-ounce can diced tomatoes
One 10-ounce can diced tomatoes with green chiles, such as Ro*Tel
Salt and freshly ground black pepper
8 ounces processed cheese, such as Velveeta

1 can(s) pinto beans
1 can(s) garbanzo beans
1 can(s) dark red kidny beans
1 can(s) light red kidney beans
1 can(s) navy beans
1 can(s) black beans
1 can(s) diced tomato
3/4 c ketchup
2 pkg goya sazon seasoning
1 Tbsp liquid smoke flavoring
1 diced bell peppar
1 diced onion
1 tsp minced garlic
salt and pepper to taste
3 Tbsp chicken bouillon granules

Steps:

  • 1. In a soup pot (2qt pan), sautee onion, bell pepper, minced garlic, and cook meat of choice. I use cubed pork most often, but this is great with ground beef or cubed chicken as well. If your using pork of chicken then just lightly brown them until the opaque.
  • 2. Drain all beans and rinse. Add beans and tomatoes to 2qt pan, cover with water, add Sazon seasoning packets, ketchup, liquid smoke, and salt and pepper to your taste.
  • 3. The longer this cooks the better it tastes!! Bring to a boil, cover and cook until you're ready to eat. Top with shredded Mexican cheese blend. That's it. :)
