LOVELESS CAFE'S HUSH PUPPIES

Loveless Cafe's Hush Puppies image

This recipe for hush puppies is from "Southern Country Cooking from the Loveless Cafe," by Jane and Michael Stern. Serve this and a side of sour slaw with braised pork chops for a delicious meal.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Number Of Ingredients 11

2 cups cornmeal
2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon coarse salt
1/2 cup grated onion
1/4 cup sliced green onion
1 large egg yolk
1 cup buttermilk
6 large egg whites
Canola oil, for frying

Steps:

  • In a large bowl, whisk together cornmeal, flour, baking soda, baking powder, and salt. Stir in onions. Combine egg yolk and buttermilk; stir into cornmeal mixture until combined.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat egg whites until stiff. Gently fold into cornmeal mixture.
  • Fill a large deep skillet with 2 to 3 inches oil. Heat oil until it reaches 375 degrees on a deep-fry thermometer. Working in batches, drop batter, 1 teaspoon at a time, into the oil and cook, turning once, until the hush puppies rise to the surface and are golden brown, 2 to 3 minutes. Transfer to a paper-towel-lined plate. Serve immediately.

Tips:

  • Use fresh corn kernels for the best flavor. Frozen or canned corn can be used in a pinch, but fresh corn will give your hush puppies a sweeter, more flavorful taste.
  • Don't overmix the batter. Overmixing will make the hush puppies tough. Mix just until the ingredients are combined.
  • Heat the oil to the correct temperature before frying the hush puppies. The oil should be between 350°F and 375°F. If the oil is too cold, the hush puppies will absorb too much oil and be greasy. If the oil is too hot, the hush puppies will brown too quickly and be undercooked in the center.
  • Fry the hush puppies in small batches. This will help to prevent the oil temperature from dropping too much, which can result in greasy hush puppies.
  • Drain the hush puppies on paper towels before serving. This will help to remove any excess oil.

Conclusion:

Hush puppies are a delicious and versatile Southern side dish that can be served with a variety of foods. They are easy to make and can be customized to your liking. Whether you like them sweet or savory, crispy or soft, there is a hush puppy recipe out there for you. So next time you are looking for a delicious and easy side dish, give hush puppies a try!
