This Lemon Lush dessert recipe is perfect for Spring and Summer picnics and gatherings. It's so light and refreshing with 4 layers of bottom pecan crust, lemon cream cheese, lemon pudding and topped with a whipped topping garnished with lemon zest.

2 cups all-purpose flour
1 cup butter (melted and cooled)
1/2 cup pecans (finely chopped or food processor processed )
1/4 cup granulated white sugar
16 ounces cream cheese (softened to room temperature)
1 cup powdered sugar (sifted)
2 tablespoons fresh squeezed lemon juice
6.8 ounces instant lemon pudding mix (2 3.4-ounce packages)
2 cups milk
8 ounces whipped topping (Cool Whip or you can substitute the same amount whipped cream)
Zest of 1/2 a lemon
Optional: Sprinkle finely chopped pecans on top
Optional: Lemon quarter slices to garnish the top

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine flour, melted and cooled butter, finely ground pecans and 1/4 cup sugar. Press into the bottom of a 9 x 13 inch baking pan. Bake 20-25 minutes (25 mins works best for me) until golden brown. Allow to cool completely before adding any layers.
  • Using a hand electric mixer, combine cream cheese, 1 cup powdered sugar, 1-2 tablespoons fresh squeezed lemon juice (2 tablespoons works best for me). Mixture should be even and smooth. Spread evenly on top of the baked and cooled bottom pecan crust.
  • In a large mixing bowl, whisk milk and instant lemon pudding mix until set. It may take 4-5 minutes to thicken. Spread evenly on top of the lemon cream cheese mixture.
  • Spread thawed whipped topping on top of the pudding layer. Add lemon zest and optional finely chopped pecans. Refrigerate for 1 hour to set before serving. Optionally, you can freeze the Lemon Lush overnight for more defined slices. Do not freeze if you substitute homemade whipped cream because it might not hold up like frozen whipped topping like Cool Whip. Enjoy!

1 cup Cool Whip, divided
1 cup powdered sugar

2 (3 3/4 ounce) packages instant lemon pudding
1 tablespoon lemon juice
3 cups milk

Steps:

  • Mix flour, margarine, and pecans.
  • Pat into a 13x9 inch baking dish and bake 15 minutes at 375 degrees; cool.
  • Beat 1 cup Cool Whip, powdered sugar, and cream cheese until fluffy.
  • Spread evenly on nut crust.
  • Stir together pudding mix, lemon juice and milk; when thickened, spread over the second layer.
  • Spread remaining container of Cool Whip evenly over top.

This luscious lemon dessert was requested by a co-worker for her birthday. The Pecan Sandies crust is at the suggestion of Kimi Gaines, who uses this for her 4-layer chocolate dessert.

1 pkg pecan sandies, crushed (save 3 - 4 for topping)
1 - 1 1/4 stick butter, softened
8 oz cream cheese, softened
1 c powdered sugar
1 c cool whip
2 box instant lemon pudding
3 c milk
1 1/2 - 2 c cool whip

Steps:

  • 1. Crush Pecan Sandies with a rolling pin; add softened butter starting with one stick and if needed, add a little more; press into the bottom of a 9 x 13" ungreased pan. Bake at 350 degrees for 12 - 15 minutes or until lightly browned. Cool
  • 2. Mix 8 oz. cream cheese, one cup powdered sugar until well blended; fold in one cup of Cool Whip and mix well. Spread over cooled crust. Mix Lemon Instant Pudding with three cups of milk and refrigerate until it begins to set up. Spread this over the cream cheese mixture.
  • 3. Spread 1 1/2 - 2 cups Cool Whip over the Lemon Pudding mixture. Crush the 3 - 4 Pecan Sandies left from the package and sprinkle over the Cool Whip. Refrigerate several hours or overnight. Variations: Use Butterscotch, Pistachio, Chocolate, or Vanilla pudding instead of the Lemon; the rest of the recipe is the same. ENJOY

2 packages (8 ounces each) cream cheese, softened

4-1/2 cups cold water, divided
2 packages (2.9 ounces each) cook-and-serve lemon pudding mix
1 cup sugar
4 egg yolks, lightly beaten
TOP LAYER:

2 c self rising flour
2 1/2 c pecans or walnuts (chopped )
8 oz cream cheese
1 c powered sugar
1 8 oz cool whip

2 can(s) condensed milk

  • 1. Preheat Oven To 350 :

1 cup pecans
1/3 cup sugar
1/2 teaspoon kosher salt, divided
6 tablespoons unsalted butter, melted, cooled slightly
1 1/2 cups heavy cream
2/3 cup homemade or store-bought lemon curd
Berries, mango, and other fresh fruit (for serving)
Special Equipment
A 10" fluted tart pan

Steps:

  • Preheat oven to 350°F. Pulse cookies, pecans, sugar, and 1/4 tsp. salt in a food processor until finely ground. Add butter and pulse until dough sticks together when squeezed with your fingertips. Transfer dough to pan and press into bottom and up sides of pan. Chill until set, about 15 minutes.
