2 cloves garlic, minced
¼ cup all purpose flour
3 cups milk ((2% or whole))
½ teaspoon kosher salt
1 ½ cups shredded mozzarella, divided
½ cup shredded parmesan
2 cups cooked chicken, diced
1 10 ounce package frozen spinach, thawed and drained
½ cup crumbled bacon
1 ½ pounds cheese tortellini, uncooked

Steps:

  • Preheat oven to 400 degrees. Spray a 9 x 13 inch casserole dish with cooking spray and set aside.
  • In a large sauce pan or dutch oven, heat butter over medium heat until melted. Add in garlic and cook for a minute. Whisk in flour and cook until flour is lightly browned, about 2 minutes. Add in milk and salt and increase heat to bring milk to a simmer. Once the milk is simmering, shut off the heat and stir in one cup of mozzarella and the ½ cup of parmesan cheese. 1 package Tortellini (250 grams (ref note 1))
200 grams Boneless Chicken Breast (Cut into cubes (ref note 2))
6-7 Bacon
1/2 cup Sundried Tomatoes (Oil drained)
1 tablespoon Butter
1 tablespoon Olive Oil
1/2 tablespoon Garlic (minced)
1 teaspoon dried Basil
1/2 Onion (finely chopped)
1/2 cup Cream
1 cup Parmesan Cheese
1/2 cup Pasta cooking water ((more if required))

Steps:

  • Bring a pot of water to boil, season with salt. Cook pasta as per package instruction.
  • While pasta is cooking, heat olive oil in a large skillet.
  • When the oil is hot, add chicken cubes, season with salt and pepper. Cook, stirring occasionally until chicken is browned and just cooked through, 4-5 minutes.
  • Remove the chicken from the pan; cover with foil and keep aside.
  • Clean pan if any brown bits are stuck, because we don't want the sauce to look brown.
  • Add chopped bacon, cook until crispy. Remove bacon from the pan and keep aside. Discard bacon fat.
  • Add butter to the pan. When butter melts add minced garlic and onion. Saute until the onion softens and raw garlic smell has disappeared.
  • Stir in sun-dried tomatoes. Cook for a minute.
  • Lower the heat and add cream, Parmesan cheese to the pan.
  • Drain tortellini and reserve 1 cup of pasta water.
  • Add cooked tortellini, chicken and Bacon to the pan. Add 1/2 cup of reserved pasta water to the pan.
  • Mix everything gently and let it cook for another 1 minute on low heat.
  • Remove from flame and serve topped with more parmesan on top.

1 (16 ounce) package penne pasta
⅓ cup olive oil
¼ cup butter
3 tablespoons minced garlic

1 cup grated Parmesan-Romano cheese blend
1 cup shredded Colby Jack cheese blend
3 eggs, beaten

2 (330 ml) envelopes four cheese pasta sauce
1 kg fresh four- cheese tortellini
3 boneless skinless chicken breasts
1/2 lb bacon
1/2 cup green onion
1 cup diced mushroom
salt and pepper

Steps:

  • Fry the bacon till crunchy so it can be crumbled into bacon bits.
  • Drain of the bacon fat and cook the boneless skinless chicken breasts in the same pan, add seasonings to taste. I like to add a bit of garlic powder and paprika.
  • When cool, crumble the bacon and cut the chicken into bite size pieces.
  • You can put this in the fridge till later in the day or use right away.
  • Put on a large pot of water to boil when it has reached the boiling point add the tortellini, while cooking chop up the green onion and fresh mushrooms.
  • Once tortellini is cooked drain off the water, add 2 packages 4 cheese pasta sauce, the cooked chicken, bacon bits, green onion and mushrooms, simmer on low heat for approx 20 min or until the sauce is warmed through. You will need to stir often so the pasta does not stick to the bottom.
  • Serve hot, this recipe will make 4-6 good size portions.
