4 loaves (1 pound each) frozen bread dough, thawed
1/2 pound thinly sliced deli salami
1/2 pound thinly sliced deli ham
1/2 pound thinly sliced pepperoni
1/2 pound thinly sliced provolone cheese
2 cups shredded part-skim mozzarella cheese
1/2 cup grated Romano or Parmesan cheese
1 tablespoon garlic powder
1 tablespoon dried oregano
1 teaspoon dried parsley flakes

1 large egg yolk, lightly beaten

Steps:

  • Let dough rise until doubled, according to package directions., Punch down. Roll each loaf into a 15x12-in. rectangle. 1 can (8 ounces) pizza sauce
1/4 teaspoon garlic powder, divided

1/2 cup chopped green pepper
1/4 cup chopped onion
1 cup sliced fresh mushrooms

This recipe is a taste of home spin off with a couple of things changed to give it more flavor. We found this final recipe worked the best and tastes delicious! Don't worry if your meat or cheese doesn't cover everything. You will be rolling this up so it will be fine. Also, create you combination of herbs. I used a seasoned mix from Penzey's and used that and it was wonderful!

2 1/2 cups all-purpose flour
1/4 ounce yeast
1 cup water (warm)
1 tablespoon sugar
2 tablespoons olive oil
1 teaspoon kosher salt
1/4 lb thin deli salami
1/4 lb thin deli ham
1/4 lb thin deli pepperoni
1/4 lb thin deli provolone cheese
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/2 head garlic
1 tablespoon dried oregano
1 teaspoon dried parsley flakes
1 teaspoon pepper
1 egg yolk (beaten)

Steps:

  • To make the dough, start by measuring 1 cup of warm water and put in sugar and the package of yeast. Wait 10 min until top is frothy.
  • While waiting for the yeast, place flour and salt in processor w/ a dough blade or stand mixer.
  • When yeast is ready, dump in water/yeast/sugar and knead until it makes a dough ball. Slowly add olive oil and mix for 1 min longer. Transfer to a large bowl and cover with saran wrap. Let rest for 45min to 1 hours Dough will double in size.
  • Creating Stromboli, this will make two loafs, so make sure to divide dough in half.
  • Roll out the dough into a 12" X 15" square. (do your best.don't have to be perfect).
  • Slice up 1/2 head of garlic and arrange and press in the dough. (Remember to reserve half for the other one).
  • Sprinkle any herbs that you are using over the dough.
  • Arrange half of the salami, ham, pepperoni, and provolone cheese evenly over the dough.
  • Sprinkle mozzarella cheese.
  • Roll up each rectangle jelly-roll style, sealing the seams and the ends.
  • Place seam side down on 2 greased baking sheets.
  • Brush with egg yolk and sprinkle on Parmesan cheese. Yo ucan also sprinkle pepper and salt over the top.
  • Bake at 375 degrees for 30-35 min or until light golden brown. Let stand 5 min before slicing.

All-purpose flour, for dusting
1 pound prepared pizza dough, proofed in a greased bowl in a warm area for at least 1 hour
1 pound shredded sharp provolone cheese
Italian Beef, recipe follows, with the reduced braising liquid
1 cup hot giardiniera
1 cup roasted red peppers
1 large egg, lightly beaten
Olive oil, for brushing
1 boneless chuck eye roast (about 3 1/2 pounds)
Salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, chopped
1 tablespoon Italian seasoning
1 tablespoon crushed red pepper flakes
6 cloves garlic, chopped
1/2 cup dry red wine
4 cups good beef stock
1 sprig fresh thyme

Steps:

  • Preheat the oven to 375 degrees F; line a baking sheet with parchment paper.
  • On a floured surface, roll out the dough and cut it into two 12-by-14-inch portions. Layer half of the cheese, then half of the Italian Beef, giardiniera and red peppers on each portion of dough. Using a pastry brush, paint one of the short borders with the egg wash. Starting with the unwashed side, roll the dough into a cylinder, pinching the ends to seal. Transfer to the prepared baking sheet, poke with a fork or sharp knife to vent and brush with olive oil.
  • Bake until golden brown on top, 20 to 25 minutes. Let stand for 15 minutes before cutting and serving with a sidecar of strained jus from the Italian Beef.
  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Liberally season the roast with salt and pepper. Heat the oil in a Dutch oven over medium-high heat. Sear the roast, browning on all sides until golden and caramelized. Reduce the heat if the oil begins to smoke. Transfer the roast to a plate and lower the heat to medium.
  • Add the onions and saute, stirring occasionally, until they are just beginning to brown, 8 to 10 minutes. Add the Italian seasoning, crushed red pepper and garlic and saute until fragrant, 1 minute. Deglaze the pan with the red wine and cook until you no longer smell the alcohol and the wine has reduced. Add in the stock and thyme and bring to a simmer. Adjust the seasoning of the braising liquid.
  • Return the roast and any accumulated juices back to the pot. Transfer to the oven and cook, turning every 30 minutes, until very tender, 3 1/2 to 4 hours. Transfer the roast to a cutting board and tent with foil. Once the roast has cooled, pull the meat into smaller chunks.
  • Strain the braising liquid through a fine-mesh strainer and return to the pot. Bring to a simmer and adjust the seasoning if necessary. Serve the jus with the meat.

2 tablespoons all-purpose flour or corn meal
1/4 pound sliced pepperoni, about 24 slices
6 slices provolone, deli sliced
6 slices Italian hot ham
8 slices Genoa salami
2 tablespoons extra-virgin olive oil
2 tablespoons sesame seeds
2 teaspoons Italian seasoning blend
2 tablespoons grated Parmigiano or Romano
1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
The Big Dipper: Simple Marinara Dipping Sauce, recipe follows, optional
1 tablespoon extra-virgin olive oil
3 cloves garlic, finely chopped
1 teaspoon hot red pepper flakes
1 tablespoon anchovy paste, optional but recommended
1 tablespoon chopped flat-leaf parsley
1 (15-ounce) can crushed tomatoes

Steps:

  • Preheat oven to 400 degrees F.
  • Break open the tube of dough and remove it from container. Dust your hands and lightly coat the dough with flour or cornmeal the roll out onto work surface. Stretch out dough, gently spreading out the rectangle shape it has been formed into already. Cut the thin rectangular dough into 4 equal pieces, working across the dough: cut it in half and cut each half in half again. Cover each piece of dough with: 6 slices pepperoni, 1 1/2 slices cheese, 1 1/2 slices hot ham and 2 slices Genoa salami. Roll each piece on an angle from corner to corner making a long roll that is thicker in the middle and thinner on each end. Brush rolls with extra-virgin olive oil then mix sesame seeds, cheese and seasonings in a small cup, sprinkle and pat the mixture into the dough. Bake until evenly golden, 12 to 14 minutes then serve. If desired, serve with Dipping Sauce.
  • Heat a small pot over medium heat. Add extra-virgin olive oil, garlic, pepper flakes and anchovy paste. Cook 2 minutes. Add parsley, tomatoes, salt and pepper. Stir sauce, bring to a bubble and simmer 5 minutes over low heat then place in small bowl and serve.

1 pizza dough, divided in half
1 cup sweet marinated peppers, chopped (recommended: Peppadew)
2 tablespoons minced garlic
1 tablespoon Italian seasoning
1/4 pound sliced ham
1/4 pound sliced hot sopressata
1/4 pound sliced salami
1/4 pound thinly sliced pepperoni
4 cups grated mozzarella
1 egg, lightly beaten
Olive oil, for brushing
Smoked salt (optional)
2 cups good quality marinara sauce, warmed

Steps:

  • Preheat the oven to 400 degrees F. Spray 2 baking sheets with nonstick spray.
  • On a lightly floured surface, roll out both halves of the dough to large rectangles, about 9 by 13 inches. Sprinkle each with the sweet peppers, garlic, and Italian seasoning, leaving a 1-inch border. Evenly distribute the ham, sopressata, salami, pepperoni, and mozzarella over each of the dough rectangles.
  • Using a pastry brush, paint the border of 1 long edge on each piece of dough with the egg wash. Starting at the opposite long end without the egg wash, roll up each dough like a jellyroll. Repeat with the other dough. Place on the prepared baking sheets and brush the tops with olive oil. Sprinkle with smoked salt, if desired. Place a few slits in the top of the dough for venting.
