- Preheat the broiler. Cut each piece of bread in half crosswise, then place cut-side-up on a rimmed baking sheet. Brush with the olive oil and season with a pinch each of salt and pepper. Broil until lightly toasted and browned at the edges, about 2 minutes.
- Meanwhile, cook the bacon in a medium nonstick skillet over medium heat until browned and crispy, turning as needed, 6 to 8 minutes. Remove to a paper towel-lined plate to drain; discard any bacon fat in the skillet.
- Whisk the eggs, half the scallions, 1/4 teaspoon salt and several grinds of pepper in a large bowl, then add to the warm skillet. Cook, stirring with a heatproof silicone spatula, until the eggs are just set and form large, soft curds, 2 to 3 minutes. Remove from the heat.
- Spread the spicy mayonnaise evenly on top of the toasted bread, then sprinkle with about half of the Cheddar. Place 2 pieces of bacon on each pizza. - This recipe is a lot quicker if you precook your Bacon and Sausage the night before and store them in your refrigerator as I do -- the prep time will be based on this.
- Preheat your oven to 400°F
- For the Pizza Dough, if you can find it frozen, uncooked, and preshaped. it's a huge time saver. If not, just prepare it as you would normally on a large pizza pan (I make the crust about 1/4 thick). Excluding the 1 1/2 of the outer crust, make little indentations with your fingertips in the dough. This helps the egg settle and cook more evenly.
- Beat the eggs with the milk, and pour over the center of the crust. Use your fingers, or a pastry brush to evenly disperse the egg.
- Evenly cover the egg with the strips of ham.
- Scatter the sausages, and if you want to have them, add the onion. Salt and pepper it lightly.
- Add a blanket of the Mozzarella cheese, then the Cheddar.
- Sprinkle the crumbled bacon.
- Put this wonderful pie in the oven on the center rack and check it after 15 minutes. It's hard for me to give an approximate cooking time as I used a ride through oven for 7 minutes at 475°F at my work. If it looks done, then it is. The egg layer is thin enough to cook in 10 minutes or so, so it's really just about the crust and how you like it.
- Once you've deemed it to be done, take it out of your oven and garnish it with some chopped chives. Slice, and enjoy! It's great on the go, and is wonderful hot or cold. I'm hoping this recipe will make your household as happy as it made my customers :).
3 MEAT BREAKFAST PIZZA
We love pizza--even for breakfast. Feel free to add any of your favorite toppings too. This is very filling and great served with fresh fruit. Also super as a light lunch or supper. - Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 375 degrees F (190 degrees C).
- Brown sausage and drain. Separate crescent roll dough into 8 triangles. Place in an ungreased 12 inch pizza pan with points toward the center. Press together to form a crust. Bottom of crust should be sealed and outside edge should be slightly raised. Spoon sausage over crust. Sprinkle with hash browns and top with cheddar cheese.
- Beat together eggs, milk, salt and pepper; pour over crust. Sprinkle with parmesan cheese.
- Bake in preheated oven until eggs are set, about 25 to 30 minutes.

- 1. NOTE: You can use already made pizza crust, frozen or homemade pizza dough. Cooking time can and will vary depending on the pizza dough you select. Be sure to follow instructions for baking your pizza based on the dough you selected to use. I used a homemade dough and the directions are based on the dough I used.
- 2. Preheat oven to 425 degrees.
- 3. Stretch or press dough out onto a large pizza pan. I used a 16-inch round pizza pan. NOTE: I stretched this dough by turning in a circular motion as I let it hang freely from my (oiled) hands. I found the hard way that rolling out a dough will only make it tough.
- 4. Spread a thin layer of pizza sauce over dough. (NOTE: don't over do it with the pizza sauce or dough will be soggy). Then start layering your favorite toppings. I loaded this pizza with 3 meats, peppers, onions, olives, mushrooms and thinly sliced tomatoes and then topped with shredded mozzarella cheese.
- 5. Bake for 20 minutes or until crust is golden brown around the edges.
- 6. DIRECTIONS FOR PIZZA DOUGH USING BREAD MACHINE: Place ingredients in pan of bread machine in the order they are listed.
- 7. Select 1-lb setting and then select dough cycle and start your machine.
- 8. Once machine has finished it's work, oil hands and stretch dough by allowing the dough to hang from your hand while turning it slowly in a circular motion. Once the appropriate size or close to size you need, lay onto pizza pan. Press edges out as needed to fit your pan. If you are already a pro with pizza and can toss, then toss your pizza dough. I've not mastered that yet!
- 9. NOTE: do not roll out the pizza dough or you will have a tough dough.
