This recipe was in a cookbook I got for Christmas in 1974. Whenever we plan a family dinner, my cousin will always say, "And Lane will bring the Orange Jello Salad"! It's not 'diet food' so I save it for special occasions. Could also be used as a dessert.

1 box orange jello
1 can(s) 8oz crushed pineapple, drained, save juice
1 can(s) 15oz fruit cocktail, in syrup, drained, save juice
1 box 8oz cream cheese, softened
1 8oz tub cool whip
1 1/2 c sugar
1/4 c flour
4 eggs, well beaten
3 Tbsp lemon juice
2 c saved fruit juices. add water as needed to make 2 cups.
1/2 c pecans, toasted and chopped, for garnish

Steps:

  • 1. Make jello according to package directions minus 1/4 cup water.
  • 2. Add drained pineapple and fruit cocktail. Mix evenly. Pour in 9x13 glass pan.
  • 3. Put in fridge till set.
  • 4. Next mix softened cream cheese and Cool Whip.
  • 5. Spread over Jello. Put back in fridge.
  • 6. Mix sugar and flour, add eggs, lemon juice and 2 cups saved fruit juices. Add water as needed to make 2 cups.
  • 7. Cook over med high heat, stirring constantly, till thickened, COOL, spread over Cool Whip layer.
  • 8. Garnish with toasted, chopped pecans. Refrigerate overnight or at least 6 hours before serving.

4 cups water
6 oz Orange Jello Mix
3 ounce instant vanilla pudding
11 ounce can Mandarin oranges, drained
1/2 of a 20 ounce can of Pineapple chunks, drained
One 8 ounce container cool whip

Steps:

  • Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

1 package (3 ounces) raspberry gelatin
1 cup boiling water
1 package (10 ounces) frozen sweetened raspberries
ORANGE LAYER:
1 can (11 ounces) mandarin oranges
1 package (3 ounces) orange gelatin
1 cup boiling water
1 package (8 ounces) cream cheese, softened
LIME LAYER:
1 package (3 ounces) lime gelatin
1 cup boiling water
1 can (8-1/2 ounces) crushed pineapple

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in raspberries until thawed. Pour in a greased 8-in. square dish; refrigerate until set., Drain oranges, reserving juice.
