Fire up the grill for a salsa packed with tomatillo, onion and cilantro and a shot of chipotle chile.

Provided by Food Network Kitchen

Time 35m

Yield 4

Number Of Ingredients 6

8 ounces tomatillos, husked and well washed (about 3 large tomatillos)
1/2 medium yellow onion, cut lengthwise into 3 wedges
1 large clove garlic, unpeeled
1/4 cup fresh cilantro leaves
1 chipotle chile in adobo sauce
Kosher salt

Time 45m

Number Of Ingredients 6

1/2 recipe Grilled Tomatoes
1 jalapeno chile
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, finely chopped
2 tablespoons freshly squeezed lime juice
Salt

Steps:

  • While preparing grilled tomatoes, grill jalapeno, turning occasionally, until charred all over. Rub off skin with a paper towel; finely chop jalapeno (include seeds for added heat).
  • In a bowl, toss tomatoes, jalapeno, onion, and cilantro with lime juice. Season with salt, as desired.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your salsa. Look for tomatoes that are deep red and free of blemishes.
  • Use fresh herbs: Fresh herbs like cilantro, basil, and oregano add a burst of flavor to salsa. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less since they are more concentrated.
  • Don't overcook the tomatoes: Overcooking the tomatoes will make them mushy and lose their flavor. Cook them just until they are soft and slightly charred.
  • Let the salsa cool before serving: This will allow the flavors to meld together and develop.
  • Serve salsa with your favorite Mexican dishes: Salsa is a versatile condiment that can be served with a variety of Mexican dishes, such as tacos, burritos, enchiladas, and nachos.

Conclusion:

Three-ingredient grilled and fresh tomato salsa is a quick, easy, and delicious way to add flavor to your favorite Mexican dishes. With just a few simple ingredients, you can make a salsa that is packed with flavor and freshness. So next time you're looking for a quick and easy salsa recipe, be sure to try this one.
