Nonstick cooking spray, for the cake pan
4 cups crispy chocolate cookies
1 tablespoon baking powder
2 cups milk
2 cups powdered sugar
1 tablespoon milk
1/4 cup mixed sprinkles

Steps:

  • For the cake: Spray an 8-inch square cake pan with cooking spray, then line with parchment, allowing the parchment to hang over the sides. Spray the parchment paper with cooking spray to prevent sticking. Preheat the oven to 350 degrees F.
  • Place the cookies and baking powder in a food processor and process until fine crumbs form. With the food processor running, slowly drizzle in the milk. Continue to process until you have a smooth batter, about 2 minutes.
  • Pour the batter into the prepared cake pan and bake until a toothpick inserted in the center comes out clean, 20 to 22 minutes.
  • For the icing: Meanwhile, combine the powdered sugar and milk in a large bowl. Whisk until smooth, then set aside.
  • Allow the cake to cool slightly in the pan before carefully removing it from the pan using the parchment overhang and placing it on a platter.
  • Allow to cool completely, about 30 minutes. Pour the icing over the top and spread it all over. Top with the sprinkles, then slice and serve.

Healthy yet deviously delicious. I got this off of the Soma Studio website. No one believes me when I say it's flourless. I usually make it with a decadent chocolate icing, but I've made it with chocolate avocado icing and it was still scrumptious.

15 ounces of unseasoned black beans
5 large eggs
1 tablespoon pure vanilla extract
1/2 teaspoon sea salt
6 tablespoons coconut oil
1/2 cup honey
6 tablespoons dark Dutch-processed cocoa powder
1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Grease 9" cake pan and dust with cocoa powder, tapping to evenly distribute.
  • Drain and rinse beans. Shake off excess water.
  • I use handheld mixer to pulverize beans smooth.
  • Add in 3 of the eggs, vanilla, salt and continue mixing. When smooth, add in coconut oil and honey. Add in last 2 eggs.
  • In separate bowl, sift in cocoa powder, baking soda and baking powder and then add to the wet ingredients
  • Beat on high until you achieve a nice smooth consistency. Approx 1 minute.
  • Scrape batter into pan and rap on counter a few times to free any bubbles.
  • Bake for 40-45 minutes. Cake is done when top is rounded, firm to touch and toothpick comes out clean.
  • LET CAKE SIT OVERNIGHT IF POSSIBLE or at least 8 hours. It's not a ready-eat-right-away type of cake.
  • Frost with favorite frosting and enjoy.

16 ounces good quality semisweet chocolate, cut into small pieces
10 tablespoons unsalted butter, cut into small pieces
5 extra large eggs
1 pinch salt

Steps:

  • preheat oven to 375. line the bottom of an 81/2" sprinform pan with parchment paper and spray with non-stick spray. heat chocolate and butter in a double boiler, stir until melted (or, heat in a microwavable bowl in microwave until melted).
  • put eggs and a pinch of salt in the bowl of an electric mixer, whip for 8 minutes until tripled in volume.
  • with a rubber spatula fold chocolate into egg mixture until well incorporated pour into springform pan, bake for 20 minutes.
  • center will be moist remove and let it cool 30 minutes before removing from pan and slicing.
