2 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 eggs
1/2 cup milk
1/2 cup vegetable oil
2 cups shredded carrots
1 1/2 cups flaked coconut
1/2 cup candied cherry, quartered
1/2 cup raisins
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients.
  • In a small bowl, combine the eggs, milk and oil.
  • Stir into dry ingredients just until moistened.
  • Fold in the carrots, coconut, cherries, raisins and pecans.
  • Pour into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans.

A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
handful dried banana chips, for decoration

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
  • Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
  • Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
  • Cool in the tin for 10 mins, then remove to a wire rack.
  • Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
  • Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

2 1/2 c all purpose flour
1 c sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground mace
1/2 tsp salt
3 beaten eggs
1/2 c oil
1/2 c whole milk
2 c shredded carrots
1 1/3 c flaked coconut
2/3 c roughly chopped maraschino cherries

Steps:

  • 1. Stir together flour, sugar, baking powder, baking soda, mace and salt.
  • 2. Combine eggs, milk and oil. Stir well. Pour the liquid mixture into the dry ingredients.
  • 3. Stir in Carrots, Coconut & chopped cherries
  • 4. Pour into 9 X 5 X 3 loaf pan or 21 ounce pie filling cans.
  • 5. Bake in 350 oven 1 - 1 1/4 hours
  • 6. Cool in pan approx. 10 minutes. Remove from pan, let cool completely. Wrap and store overnight before slicing.

I have been making this for many years. I started making them in coffee cans and vegetable cans to give as gifts and to send for gifts they are real handy when needing to ship in the mail or Fed-Ex or by UPS. What is real nice about baking in the cans is when you slice them is that they fit in the toaster perfectly or on a party tray beautifully. I love the 3C bread more so because I am not a big fruit cake person. Sometimes I add spiced rum for that special touch.

1 teaspoon baking soda

GLAZE:
1/2 cup miniature semisweet chocolate chips
1 tablespoon butter
2 to 3 tablespoons half-and-half cream
1/2 cup confectioners' sugar
1/4 teaspoon vanilla extract
Pinch salt

Steps:

  • Ina microwave-safe bowl, melt 1 cup chocolate chips; set aside to cool. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs and cooled chocolate; mix well. Add applesauce and vanilla; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well.
