THREE-BEAN BAKED BEANS (OVEN OR CROCK POT)
This is my summer time dish for all BBQ's and I always double the recipe. If you enjoy baked beans you have to try this one. It's from a '98 TOH and whenever I make it someone always asks for the recipe. I have personally never made it in the oven since the crock pot does just fine and who wants to heat up the house in the summer? When using the crock pot I will take the lid off for the last hour or so (+/-) of cooking - this will thicken it up if you like your beans thick right at serving. Leftovers freeze very well.

Tips:
- Choose the right beans: For the best texture and flavor, use a variety of beans, such as kidney beans, pinto beans, and black beans.
- Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 2-3 minutes and then letting them sit for an hour.
- Use a flavorful liquid: The liquid you use to cook the beans is important for adding flavor. Use a combination of water and broth, or even beer or apple cider.
- Add aromatics: Aromatics, such as onion, garlic, and celery, add depth of flavor to the beans. Sauté them in a little oil before adding the beans and liquid.
- Season the beans well: Season the beans with salt, pepper, and other spices to taste. You can also add a little bit of sugar to balance out the acidity of the tomatoes.
- Cook the beans until tender: The beans should be cooked until they are tender but still hold their shape. This usually takes about 1-2 hours.
- Serve the beans with your favorite sides: Baked beans are a great side dish for grilled meats, fried chicken, or pork chops. You can also serve them over rice or toast.
