1 lb. Italian sausage (ground )
1/2 medium onion (diced)
3 cloves garlic (pressed)
28 oz tomatoes (crushed with basil)
14 oz tomatoes with italian herbs (diced )
2 tbsp tomato paste
2 tbsp water
1 tbsp Dried Italian Herbs
1 tbsp sugar
Salt and pepper (to taste)

Steps:

  • Brown the Italian sausage, onion and garlic in a large pot or dutch oven over medium heat, breaking up the meat with a wooden spoon as it cooks.
  • Stir in the crushed tomatoes, diced tomatoes, tomato paste, water, italian herbs and sugar. Bring the mixture to a light boil and reduce heat to a simmer.
  • The longer you let the mixture simmer the more flavorful it will become. Simmer at least 10 minutes. Serve over freshly cooked pasta or in lasagna. Enjoy!

1 pound mild Italian sausage, casing removed
3 tablespoons olive oil
4 cloves garlic, thinly sliced
8 ounces spaghetti, broken in half
One 28-ounce can tomato puree, preferably San Marzano
2 sprigs basil
Pinch crushed red pepper flakes
Kosher salt
1/4 cup freshly grated Parmesan (about .75 ounce), plus more for serving

Steps:

  • Roll the sausage into 16 balls (each about 1 ounce and 1 inch in diameter). Set a 6- or 8-quart Instant Pot® to high saute (see Cook's Note). Add the olive oil to the pot; once it's shimmering, add the meatballs and cook until lightly browned on one side, about 2 minutes. Flip the meatballs and add the garlic. Cook until meatballs are lightly browned on the other side and the garlic is tender, 1 to 2 minutes more. Lay the spaghetti on top of the meatballs, then add the tomato puree, 2 cups of water, basil, red pepper flakes and 2 teaspoons salt. Stir gently, making sure all the spaghetti is submerged in the sauce.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 6 minutes. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete (this should take about 2 minutes). Being careful of any remaining steam, unlock and remove the lid, then stir in the Parmesan. Serve with another sprinkle of grated Parmesan on top. The pasta sauce will thicken as it sits and cools.

1/8 teaspoon pepper
1 beef bouillon cube
1 pound spaghetti, cooked and drained
grated parmesan cheese
VARIATION SUGGESTIONS:
add 1/4 cup dry red wine

add 1 green pepper, diced

2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water

Steps:

  • Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. 2 Tbsp butter
2 Tbsp olive oil or oil of your choice
3 to 4 garlic cloves, chopped and mashed
3 Tbsp basil pesto sauce (prepared)
1 knorr vegetable or chicken cube
pepper to taste
1 can(s) whole italian style tomatoes (no juice)
keep the tomato juice for later if required
SERVE AS A 'PRIMA DISH' FOLLOWING THE SALAD
I USE PENNE OR ROTINI PASTA; FOR INDIVIDUAL SERVINGS. OR LAYERED ON A SERVING DISH
TOP WITH SAUCE;
TOP WITH DRAINED CANNED NAVY BEANS;

  • 2. Add the Knorr Cube, pepper, GOOD ITALIAN TOMATOES ARE PREFERRED where the juice is thick like Hunts Tomato Sauce. add ONLY THE TOMATOES from the can to the saucepan. I cut the tomatoes with scissors and then mash them with a fork
  • 3. Continue on medium heat until it thickens a bit. Depending on the quality of tomatoes (the juice may be very thin) if it thickens too quickly add the juice and simmer it down. DO NOT USE Pureed Tomatoes
  • 4. AT THE START: PUT THE WATER ON TO BOIL........ START MAKING THE SAUCE ............ WHEN THE WATER IS BOILING ADD SALT AND COOK THE PASTA...... THEY SHOULD BE READY TOGETHER. I HAVE MADE THIS IN LARGE QUANTITIES SERVING 25
  • 5. This recipe is delicious and very tasty. This recipe will serve 3 - 4 persons.... depending on how much sauce you like on your spaghetti. I have made this sauce for 20 persons and more. IF 1 recipe serves 4 .... FOR 20 persons Increase all ingredients by multiplying by 5 AND preferably by 6 to be sure.
