RUSH HOUR REFRIED BEANS

I love refried beans but don't always have the time to work with dried beans. This recipe uses canned beans and still tastes like I spent all day on it. Sometimes I crumble bacon on top of the finished product.

2 garlic cloves (minced)
2 (15 ounces each) cans pinto beans (DO NOT rinse and drain)
1 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon cayenne pepper (omit if you don't want the heat)

Salt and pepper (to taste)

  • In a large skillet, melt butter over medium heat. Add diced onion and saute for 4-5 minutes or until onion is translucent.
  • Add garlic to melted butter and onions and saute for another minute.

REFRIED BEANS

Time 2h40m

Yield about 5 cups (8 servings)

Number Of Ingredients 13

2 cups dried pinto beans, soaked overnight in a large bowl with water to cover by 2-inches, and drained
1 bay leaf
3/4 cup bacon drippings or lard
2 cups chopped yellow onions
1 1/2 tablespoons minced garlic
1 1/2 tablespoons minced, seeded jalapeno
1 1/2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon cayenne
1 teaspoon chopped oregano
1 cup grated queso blanco
1/4 cup minced fresh cilantro, garnish

Steps:

  • In a large, heavy pot, combine the beans, bay leaf, and enough water to cover by 1 to 2 inches. Bring to a boil. Lower the heat and simmer uncovered, stirring occasionally, until the beans are very tender, 1 1/2 to 2 hours, adding more water as necessary to keep covered. When the beans are soft, mash in the pot with a potato masher or the back of heavy wooden spoon. Remove from the heat.
  • In a large, heavy skillet, heat the bacon fat over medium-high heat. Add the onions and cook, stirring, until soft, 4 to 6 minutes. Add the garlic, jalapeno, chili powder, cumin, salt, and cayenne, and cook, stirring, until fragrant, 45 seconds to 1 minute. Add the beans and any cooking liquid from the pot, and the oregano, and stir to combine. Cook, stirring with a heavy wooden spoon, until the mixture forms a thick paste, 15 to 20 minutes, adding water a bit at a time to keep the beans from drying out too much.
  • Remove from the heat and transfer to a decorative bowl. Sprinkle with the cheese and cilantro, and serve.

Tips:

  • Choose the right beans: Pinto beans are the traditional choice for refried beans, but you can also use black beans, kidney beans, or a combination of beans. Just be sure to use dried beans, not canned beans.
  • Soak the beans overnight: Soaking the beans overnight will help them cook more evenly and quickly. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute and then letting them sit for 1 hour.
  • Use a good quality oil: The type of oil you use will affect the flavor of your refried beans. I recommend using a light-tasting oil, such as olive oil or vegetable oil.
  • Don't overcook the beans: Overcooked beans will be mushy and bland. Cook the beans just until they are tender, about 15 minutes.
  • Season the beans to taste: Once the beans are cooked, season them with salt, pepper, and cumin. You can also add other spices, such as garlic powder, onion powder, or chili powder.
  • Mash the beans until smooth: You can mash the beans with a potato masher, a food processor, or even a fork. Just be sure to mash them until they are smooth and creamy.
  • Serve the beans immediately: Refried beans are best served immediately after they are made. However, you can also store them in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Conclusion:

Refried beans are a delicious and versatile dish that can be enjoyed in many different ways. They can be served as a side dish, a main course, or an appetizer. They can also be used as an ingredient in other dishes, such as tacos, burritos, and enchiladas. With so many possibilities, refried beans are a great addition to any kitchen.
