3 cups bran flake cereal, finely crushed (*see note)
1 1/4 cups all purpose flour
2/3 cup light brown sugar
1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1 cup buttermilk
1/3 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
3 tablespoons turbinado sugar for sprinkling

Steps:

  • Combine the cereal, flour, brown sugar, baking soda, salt, and cinnamon into a large bowl and whisk together. Set aside.
  • In a separate bowl whisk together the buttermilk, oil, egg, and vanilla. Pour the wet ingredients into the dry and stir to blend well. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours or up to 12 hours. The batter will become very thick.
  • Preheat oven to 400°F. Line your muffin tin with 10 paper liners and set aside.
  • Divide the batter evenly among the liners, filling them completely. Sprinkle with the turbinado sugar.

1 cup boiling water
2 cups all-bran cereal
1 cup bran flakes
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups buttermilk
2 1/2 cups flour

Steps:

  • Pre-heat oven to 350.
  • Boil water and pour over All Bran and Bran Flakes, stir. Set aside for 5 minutes.
  • Cream sugar, shortening and eggs. Add flour, soda, cinnamon, salt and buttermilk to sugar mixture. Mix until smooth.
  • Stir water and bran mixture then add to batter. Mix well.
  • Fill cupcake tin with liners and fill cups 1/2 full, then bake 15-20 minutes.

1 quart buttermilk
1 cup vegetable oil
1 cup sugar
6 cups (10 ounces) bran flakes with raisins
1/2 to 1 cup raisins
5 cups all-purpose flour
5 teaspoons baking soda
1 teaspoon salt

Steps:

  • In a large bowl, beat eggs, buttermilk, oil and sugar. Stir in cereal and raisins. Sift together flour, baking soda and salt; add to egg mixture. Stir just until all ingredients are moistened. If desired, store batter, covered, in the refrigerator for up to 7 days. To bake, gently stir batter; fill greased muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until golden brown. ⅓ cup vegetable oil
1 egg
