Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.
  • Enjoy!

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the taste of your bruschetta. Choose tomatoes that are deep red and juicy, with no blemishes.
  • Toast the bread well: The bread should be crispy on the outside and chewy on the inside. Toasting it will also help it to hold up better under the toppings.
  • Don't skimp on the olive oil: Olive oil is essential for adding flavor and richness to bruschetta. Use a good quality extra virgin olive oil.
  • Use fresh basil: Fresh basil adds a bright, herbaceous flavor to bruschetta. If you don't have fresh basil, you can use dried basil, but it won't be as flavorful.
  • Season the tomatoes well: Salt and pepper are essential for bringing out the flavor of the tomatoes. You can also add a pinch of garlic powder or red pepper flakes for extra flavor.
  • Don't overload the bruschetta: Too many toppings can make the bruschetta soggy. Stick to a few simple, flavorful ingredients.
  • Serve the bruschetta immediately: Bruschetta is best served fresh, so make it just before you're ready to eat it.

Conclusion:

Bruschetta is a delicious and easy-to-make appetizer or snack. It's perfect for parties, potlucks, or just a casual get-together. With a few simple ingredients and a little bit of time, you can create a delicious bruschetta that everyone will love. So next time you're looking for a quick and easy appetizer, give bruschetta a try.
