For Brownie in a Mug
4 tablespoons (1/4 cup) all-purpose flour
4 tablespoons (1/4 cup) unsweetened cocoa powder
3 1/4 tablespoons dark brown sugar
1/2 teaspoon baking powder
A pinch of salt
6 tablespoons regular or dairy-free
2 tablespoons any neutral vegetable oil (I used sunflower oil)
1/2 teaspoon vanilla extract
1 tablespoon + 1 teaspoon semi-sweet chocolate chunks or chips
2 tablespoons chopped walnuts
For serving (optional):
Chocolate walnuts
Whipped cream of vanilla ice cream
Berries of your choice
Chocolate or caramel sauce
NOTE: Some ingredients can be replaced with their vegan counterparts.

Steps:

  • In a microwave-safe mug, add flour, cocoa, sugar, vanilla, salt, baking powder, oil, and milk.
  • Whisk briskly until you get a smooth lump-free batter.
  • Add in the 2 tablespoons chopped walnuts, and 1 tablespoon chocolate chips.
  • Mix again until everything is combined. Clean the edge of the cup.
  • Sprinkle with some chocolate chips/chunks. Using a paper napkin, clean the inner edge of the cup.
  • Cook in a microwave for about 2 minutes at full power. (My microwave is 1000 watts. So you may need to adjust the time. Start with 1 minute 20 seconds, and then an additional 20-30 seconds or until it gets cooked.)
  • At this point, the top of the brownie is cooked perfectly and is no longer wet. Remove it from the oven and let it cool for a few minutes before eating.
  • Top with toppings like chopped walnuts, whipped cream, berries, and chocolate sauce. Enjoy it warm.
  • NOTE: Watch the recipe video to learn how to perform these cooking steps.
  • ENJOY THIS RECIPE.

I love this recipe, especially while babysitting younger kids (they love this) and during the hot summers (when it's unbearable to turn the oven on). It's quick, easy and clean.

Tips:

  • Use the right mug. A large, microwave-safe mug is ideal. It should be at least 12 ounces in volume, and it should have a wide mouth so that the brownie can rise properly.
  • Don't overcook the brownie. The brownie is done when a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Let the brownie cool for a minute or two before eating it. This will help to prevent the brownie from falling apart.
  • Serve the brownie with your favorite toppings. Some popular toppings include ice cream, whipped cream, chocolate chips, and nuts.

Conclusion:

This 2-minute microwave brownie in a mug is a quick and easy dessert that is perfect for satisfying your chocolate cravings. It is also a great way to use up any leftover chocolate chips or cocoa powder. With just a few simple ingredients, you can enjoy a delicious and decadent brownie in just minutes.
