1 teaspoon cumin
1 teaspoon dried oregano
1/2 teaspoon ground coriander
1 cup canned crushed tomatoes in puree
15 ounces black beans, drained and rinsed
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
5 (10 inch) flour tortillas
2 cups cooked rice, warmed
2 medium tomatoes, diced
1 cup shredded cheddar cheese (4 oz.) or 1 cup monterey jack cheese (4 oz.)
1/4 cup finely chopped red onion
1 medium garlic clove, minced
1 tablespoon vegetable oil
1 medium yellow onion, finely chopped
1/2 medium green bell pepper, finely diced

Steps:

  • In large nonstick skillet, heat oil over medium heat. Add yellow onion and bell pepper and cook, stirring occasionally, until onion is translucent, about 5 minutes. (Do not brown.)
  • Add garlic, chili powder, cumin, oregano and coriander and cook, stirring, 1 minute. Stir in canned tomatoes, beans, salt and pepper.

1 cup uncooked instant rice
1/2 cup shredded cheddar cheese

Steps:
