1 cup buttermilk
2 eggs
3 1/4 cups whole wheat flour
4 ml salt
2 tablespoons gluten
3 tablespoons margarine
1/4 cup honey
2 teaspoons dry active yeast

Steps:

  • Microwave buttermilk for 30secs to a minute so it's lukewarm.
  • Add all ingredients to breadmachine in the order listed.
  • Select 1.5 lbs loaf
  • NOTE: Due to difference in moisture content of flour you may want to watch bread mixture to ensure the right consistency. If the mixture is too dry add one tablespoon of buttermilk and a time & if it's too wet add a tablespoon of flour at a time. Make sure the buttermilk or flour is completely incorporated before adjusting again.

It is summer and I still want to make my own bread without heating up the house.So I tried this and very pleased with the result. White whole wheat flour is new around here. Next time I will try it with regular whole wheat.

2 teaspoons vinegar (I prefer cider vinegar, or unseasoned rice vinegar)
4 teaspoons gluten
3 cups whole wheat flour, minus 4 teaspoons
1 1/3 teaspoons bread machine yeast

Steps:

  • Put 4 teaspoons of gluten in the bottom of a one cup measure. Add whole wheat flour to fill the cup, and then measure another 2 cups of just whole wheat flour.
  • Add ingredients to the bread machine as per instructions for your model.
  • As the machine begins to mix, adjust the water or extra flour to give a smooth ball of dough when kneaded.

2 tablespoons honey
¾ teaspoon active dry yeast
3 ½ cups whole wheat flour, or more as needed, divided
1 tablespoon olive oil
1 teaspoon sea salt

Steps:

  • Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
  • Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
