This soup was a lunch time staple for me while I was on Weight Watchers. I am a little picky with my veggies but this is the version I make for myself. Feel free to add any of your favorite free veggies.

Number Of Ingredients 11

6 cups nonfat beef broth
3 cups green cabbage, Diced
1 1/3 cups carrots, Sliced
1 cup onion, Diced
4 garlic cloves, Minced
1 cup green beans
2 tablespoons tomato paste
3 stalks celery, Diced
1 bell pepper, Diced
2 cups mushrooms, Sliced
2 cups broccoli, Chopped

Steps:

  • Add all the ingredients into a large pot or slow-cooker.
  • Feel free to add any other Zero Points Vegetables (Weight Watchers).
  • Simmer until Veggies are cooked.
  • Season to taste.
  • Note: Depending on my mood I will exchange the Beef broth for Fat-Free Chicken Broth or Fat-Free Vegetable Broth.

Number Of Ingredients 11

3 cups nonfat beef, chicken, or vegetable broth (beef is best)
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 cup green beans
1/2 cup chopped zucchini
1/2 teaspoon basil
1/2 teaspoon oregano
Salt & pepper to taste

Steps:

  • Spray pot with non-stick cooking spray. Sauté onions, carrots, and garlic for 5 minutes. Add broth, tomato paste, cabbage, green beans, basil, and oregano. Add salt & pepper to taste. Simmer for a about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes. Author's note: I have tried different variations. Leaving out green beans. Adding chopped green onions in addition to the yellow onion. All very good. You can customize it a bit to fit your preferences.

2 garlic cloves, minced
1 onion, diced
2 carrots, peeled and diced
1 red bell pepper, diced
2 zucchini, diced
2 cups cabbage, shredded
2 cups swiss chard, chopped
2 cups broccoli, cut into florets
2 teaspoons thyme, chopped (or 1/2 teaspoon dried thyme)
6 cups vegetable broth
2 tablespoons parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons lemon juice (optional)

Steps:

  • Put first 12 ingredients (garlic - broth) in a large pot. Cover and bring to a boil over high heat; reduce heat to a simmer and simmer partly covered for 10 minutes or until vegetables are tender. Leave veggies whole or I use an immersion blender and puree a bit -- leaving some veggie chunks.
  • Stir in parsley and season with salt, pepper and lemon juice.
